I laid out last night, a package of fully cooked smoked sausage to cook for today.... I forgot to put it back in the fridge when I went to sleep... Is it bad?? It's one of those 1/2 round sausages....

I may not be the right person to ask/answer. Just the other day I made some instant oatmeal for the boy's breakfast. He ate it, I cleaned up and then realized that it was from a box that had been in the back of the overflow pantry. It occurred to me that I should check the dates-August of 2013. I fed my kid almost two year old instant oatmeal. It looked fine, smelled fine and apparently tasted fine. So from the mother that fed her kid ancient oatmeal, I would say I am not the best judge of what is good or not.

Does it have nitrates/nitrites in it? Then it should be fine. The whole purpose of curing meat way back in the day, before refrigeration, was to preserve it for eating later.
The "uncured" sausage popular today is not preserved that way, but the traditional meat cured with sodium nitrate or nitrite should be fine.

Is it vacuum sealed? I would have thought it would be fine, particularly as it's smoked. If it smelt ok when I opened it, I would eat it and I am pretty cautious where pork is concerned.

I am usually the risk it gal....so I am leaning towards just cooking it up as long as it smells okay...I think I put it out around 8pm or so and found it this morning about 7:30ish. Yep vacuum sealed, never been opened. I will go with my nose and check it out... If you never see me on the boards again, you will all know it was the sausage!! lol

Was it frozen? I'm assuming so, if you "put it out" at 8 pm. If so, it took several hours to thaw. I'd say it's just fine.

If it was frozen when you put it out, it probably only took a couple hours to thaw, so it was on the counter thawed for nine hours or so. I wouldn't risk it for five dollars worth of meat.

I am going for it!! Getting ready to make a late dinner.... I called my mom, cause well she knows everything.. HAHA.. she said she would eat it too.. so that is that....No jambalaya though..just some fried taters.

For all of you food sniffers, you need to be aware that you CANNOT smell Listeria, Botulism, Salmonella nor E-Coli. Meat left out overnight needs to be thrown out.
