I bought baby Indian eggplant because they looked so pretty - tonight we're having roast eggplant and chickpea curry with sautéed shredded cabbage and naan

They all sound good! We're doing at home Chinese. I bought some crispy duck (youngest is home from uni for Easter break and its her favourite), prawn crackers and I'm making special fried rice, Thai green curry and stir fried veg.

I have some leftover chicken and some leftover broccoli, so I'm making chicken broccoli rice casserole with cheese like my Grandma used to make. Good old comfort food!

We're all fending for ourselves tonight. I'm having a tuna and veggie salad thanks to all the fish talk on the board! My youngest is having sushi and dumplings. My oldest is making a mini meatball pizza. My husband, steak and baked potato.

Mexican Chicken - super easy and my picky eater loves it!!!
Brown chicken breasts and chunk up
Cook 1 bag of yellow rice in a frying pan. Add 1 bag of frozen or canned corn. Drain 1 can of black beans and add to rice/corn.
Add cooked, chunked up chicken.
Serve on a plate... add toppings (we use shredded cheese, salsa and sour cream).
Scoop up with nacho chips... yum!

Leftovers from the weekend - manicotti for 2 of us and Spaghetti Cheese Casserole for the other. I think I have a Pillsbury French Loaf in the fridge, so I will probably make that to go with.

I am making Green Beans with Ground Turkey over rice. It is a Chinese food type of dish. I may make some roasted balsamic carrots too if time permits.

It's a toss up between fish & chips on the beach, or dinner at the pub. This might sound strange, but I have a craving for mashed potato. And I know that the pub here (I'm staying at a beach town) does really good mashed potato. I'll have something else with the potato of course!

Hash browns count!  LOL I was going to say Bacon counts. Bacon is food of the gods and is a category unto itself. It should not be paired with lowly vegetables!

I tried a recipe from the new issue of Better Homes & Gardens. Carrot Orzotto. It is orzo, cooked risotto style, with carrot juice and shredded carrots. DH is a big carrot fan. It was good, but we felt like it was more of a side dish than an entree.
