Been thinking about pork belly and how the only thing I've ever heard in my long, ancient life about them is some random quote about selling them on the stock market (and that was probably a cartoon or Mrs. Robinson or something). And here on the board there's a thread about cooking and Aussie Meg is saying they are her SO/DH's favorite thing in the world. What? what's a pork belly? so I had to look it up and found, oh yeah, it's some specialty thing and well, not to be found anywhere I can shop so I bought what might be the next best thing...salt pork.
So found a recipe for salt pork and Brussels Sprouts and made that, along with roasted asparagus and the daily green salad. It was pretty good. Tastes like bacon.

I always thought pork bellies were bacon! Kate *My plan to make that lasagna casserole for the past few days was vetoed by my boys. They wanted spaghetti and meat sauce, so that's what we had, with sea shell pasta instead of actual spaghetti. Then I'll make a casserole with the leftovers and all that mozzarella I had bought. I was starting to think the stupid lasagna casserole had too much stuff in it, anyway.  And broccoli. We had broccoli. That I didn't overcook for once, probably because we were in a hurry tonight.

I was planning to make breakfast for dinner. When I got to the store to grab some bacon, lo and behold, I found some sliced corned beef that was reduced. I bought that with Swiss cheese and rye bread. Grilled sammiches with potato chips. Easy-peasy dinner. And two happy teen boys. Lisa

Well, you're right! and I had never heard of them before now.
Now you can add spinach to that casserole and no one will notice the extra veggies!
And... broccoli is best uncooked and used in salad with sunflower seeds, vinegar/mayo/bacon, etc. Ha. Maybe I will add that to the meal plan for our upcoming snowbird guests if there's any broccoli to be found 'round here.

Spinach is a great idea. They actually like it. I put it in their sandwiches, too.
