I'll be watching this thread too. While we have a microwave at work, I am always open to new suggestions. I'm still fairly new to not eating out every day. (About 4 months now!)

I start with a nice salad, mine usually consist of romaine lettuce, cukes, red, yellow and orange bell peppers. I add a can of tuna (120 calories) and half of a small avocado (100 calories). Some times I top it off with beets, sometimes a hard boiled egg (70 calories). I do not use dressing. When I count calories I NEVER count non starchy vegetables. I figure I don't know anyone who is overweight because they eat too many vegetables. So with that said without the egg, it's a 220 calorie lunch, with the egg it's 290. If I'm really hungry I'll have 3 small breadsticks an additional 60 calories.

one my of typical 'non-microwave' lunches is typically a mason jar salad. (one idea from Pinterest that I've found actually works!)
I don't do 'standard' meals, exactly, so a lunch for me could be pita bread with hummus and cut-up vegetables, or vegetables & low-fat ranch or dill dip with cheese and crackers, that sort of thing. On occasion I will have a sandwich with baked chips. One of my favorite sandwiches is: whole grain bread with chive cream cheese, smoked turkey, red onion, romaine lettuce, and a tiny bit of cranberry sauce.
ETA: sorry, I didn't specifically register the 'low-cal' part of your thread title before I started typing. For me, lunch is typically my largest meal of the day.

Edamame salad: frozen, shelled edamame, small cubes of sharp cheddar, chopped strawberries, grapes, and blueberries.
Small low-cal/low-carb wrap with whatever fillings seem like a good choice: veggie dog (only 50 cal), lettuce/chicken, tofu, egg salad/chopped egg, laughing cow cheese + veg,
Cottage cheese: I love it best with lots of pepper and chopped fresh tomato on top. I usually have a size of raw zucchini or other vegetables.
Rice cake, laughing cow cheese, hard cooked egg, chopped raw vegetables
Ricotta cheese, crackers, apple.

My daily lunch is a Fage yogurt and a piece of fruit, typically an apple. About 200 calories. Sometimes I add fresh veggies and dip or string cheese, another 50-100 calories.

These mason jar salads are legit! I love them and just dump them into a bowl and eat. Super yummy and so many options. I also like a turkey sandwich with veggies.

I probably eat the most boring lunch on the planet but it's low cal, filling, and it's working for me. I have 3 or 4 slices of deli turkey or ham (Thin and Trim oven roasted turkey breast or Krakus low salt ham) rolled up individually. I also eat celery and carrot sticks (plain) and maybe some cucumber slices, if dh has them (he does the fruit and veggie part of my lunch packing). I may have a clementine for something sweet but sometimes I wait until later in the day to eat that.

I just make a half sandwich or a whole sandwich, depending on the size of the bread. There is plenty of deli meat that is low in calories- my current favorite is Boars Head Everroast chicken. Add a little mayo and son lettuce, tomato and onion if you'd like, good to go. I also make egg salad or tuna salad sandwiches.

One of my favorites is a curried chicken and chutney wrap: Spread mango chutney on some mountain bread, mix a little bit of curry powder in some low fat natural yoghurt and stir in some shredded chicken, then add some cucumber and baby spinach or pea sprouts (something green). It's only 250 calories. I actually prefer to use a normal wrap rather then the mountain bread because it's more filling. That puts the calories up a little bit, but it would still be no more than 300 calories.

I have been obsessed with salad made with power greens, green apple, turkey, carrot, and honey mustard dressing. I could eat it every day. The other thing I love is a roll up with lavash, greens, vegetables, avocado, and maybe some chicken. I make that with a spicy southwest ranch dressing that I make homemade with fat free Greek yogurt.

I make an omlette from one egg an two eggwhites, spice it up with whatever I like. I top it with some lean toppings like ham, vegetables and a little bit of avocado. If you make the eggs in a waffle iron it looks even more tasty I also bring a fruit and a low fat yoghurt, like greek yoghur.

I never use our office microwave, each day I take a chopped kale/red cabbage/shredded carrot/raisin/cranberry/almond salad with a drizzled of homemade dressing (wholegrain mustard/apple cider vinegar/agave)

Cottage cheese with some PB2 and a sliced banana. Bread with mashed avocado, salt and pepper. Both are delicious and filling. Some of the lunches listed would leave me starving: a yogurt and an apple, and some turkey meat with carrots? I'd end up binge eating when I got home from work.

Trader Joe's Salsa Verde is the most delicious thing I have eaten in ages....
So I use it on a salad instead of dressing.. it has no oil just veggies.
I like it on a small portion of corn, tomato, black bean salad, that I put over a HUGE bowl of lettuce and then about a 1/4 cup of the salsa verde!!
I also make like a breakfast burrito but in a bowl... no wrap.. so eggs, tomatoes, spinach, feta cheese with a healthy dump of salsa verde on top!

My favorite is 1 cup of low fat cottage cheese and I mix it with some fresh or frozen (but thawed) berries or pineapple and some sliced turkey.
I also like to take a low carb/high fiber tortilla, spread with some Bettern' Peanut butter and roll it up with a banana inside. Yum!
Sliced cucumber with some laughing cow and a little torn piece of sliced turkey, sprinkled with coarse black pepper.
I boil eggs every weekend and take a few and eat them for a snack later in the day (I don't eat the yolks, just the whites).

No way could I eat a cold omelet. Really? It's a common cold dish in Norway I couldn't eat cold eggs like that either. A cold boiled egg white is ok but I don't eat the yolk. I can't imagine scrambling eggs and eating them cold. Isn't it funny how we eat the same things but eat them differently in other parts of the world? We are fascinating creatures, we humans! I guess it's all in what we're exposed to.

This is what I have almost every day for lunch. It is pretty low cal.
boneless skinless chicken breast (I bake a bunch of them so we can have them in our lunches) I dice it up when packing lunch. broccoli slaw (comes in a bag it is shredded broccoli stems(which I don't like raw broccoli but love this) shredded carrots and red cabbage. (good thing about this slaw stuff is you can stir fry it if you want to make a dinner out of it) Then I cut up some zucchini and put in with the slaw. a couple halos (which are very small and great for any time) I love them in my salads. green onions and some times bell peppers depending on my mood.
I usually have some almonds or pistachios for a afternoon snack.
I have a low calorie salad dressing that I like. easy way to have a good lunch.
edited to add..... I usually don't eat lettuce to me it is wasted calories. when I can have more of the veggies that are more filling. But husband will only eat iceberg lettuce so that is what I pack for his salad.
