The canyon is beautiful. The Big Texan is a big tourist attraction-famous for the 72 oz steak dinner and other good food. I lived there 4 years and found there is not much else there.
One thing- around town you will horse statutes that were a fund raiser. Artists did their thing and then the horses were auctioned off. My favorite is the Marilyn Monroe one in the mall.

No one has mentioned "Cadillac Ranch." A local eccentric with money purchased many old Cadillacs and then buried them 1/2 into the dirt (in a line) and called it art. I was disappointed the year I drove over to see it as all the vehicles were so covered with graffiti it spoiled his creation. en.wikipedia.org/wiki/Cadillac_RanchYou really MUST drive through Palo Duro Canyon. Another thing to do in the area is in Canyon, Texas (a short drive). panhandleplains.org/pages/exhibitions_7.aspThe museum gives a look at the development of west Texas--from the ranching world to the oil world. Also, you have to go to Tyler's BBQ on Paramount. A friend of mine owns it. It seriously is the best bbq you will have ever eaten. Tyler's Barbeque

I was born and raised there. I agree that Palo Duro Canyon and the Texas show in the canyon (if it has started--it probably doesn't until after Memorial Day) are must-sees.
The Panhandle-Plains museum in the town of Canyon is also good. It holds up very well for a small-town museum.
Cadillac Ranch is a quick visit, fun to see and say you've been there.
The Big Texan is tourist kitsch. Pricey-average food, but it can be fun if that's your thing.
6th street is part of Route 66 and has little antique shops, bars and restaurants. The Golden Light cafe is a fun place to eat.
I've also heard good things about Tyler's, but I haven't been there.
There's also the Quarter Horse museum, but I haven't been there, either.

Ditto Palo Duro Canyon and the Panhandle Plains Museum. These places aren't in Amarillo though.

Very iconic 'Amarillo', IMHO.
