I am browning some ground turkey and picked up Guac and Pico from W.F.
I went on a Happy Hour date that almost ruined my appetite. He used his passport at the bar :gag:

We were supposed to have a doubleheader tonight so we had planned to feed both teams in between. The opposing team had a doubleheader last night that ran til 9pm, so they only wanted to play one today(non-league game so the teams have a bit more latitude). Anyway, we still did the cookout and fed the kids. There some hotdogs left over so dh and I had those. I only had one, so I am sitting here starving trying to decide what to eat.

In my opinion it's pretentious to use your passport as I.D. Washingtonians love to talk about how well traveled they are and where they did a peace corp tour ad nauseam.

I grilled steaks. Dh made me a salad with lettuce, avocado and grape tomatoes (I topped it with sunflower seeds and balsamic vinaigrette) and I heated some leftover corn on the cob on the grill for him.

What are sloppy janes and how do you make them? These are sloppy Joe's w/ground chicken instead of beef. They're made in the crockpot and so easy. If you want the recipe I can post it for you. Yes please do, I bet my grandsons would love them.

I took the day off to get my car serviced, so I made my stepmother's Sicilian spaghetti and meatballs. So delicious! The recipe takes 4 hours to make, so since I started working, I haven't been able to make it. (I don't cook dinner on the weekends. Either DH does, or we go out.). I've got enough sauce to freeze for two more meals. Yay!
I also deep cleaned the house, and got caught up on the laundry.
How I long for my SAHM days!

Found the recipe for Sloppy Janes on-line, so didn't even have to type it in here. It's so easy and full of flavor.
America's Test Kitchen Crockpot Sloppy Janes:
Ingredients
1lb. Ground Chicken 1 c. chopped onion 2 t. minced garlic 1/2 t. chili powder 1/2 c. canned tomato sauce 1/2 c. ketchup 1 T. packed brown sugar 1/4 t. hot sauce Salt and Pepper 4 hamburger buns
Directions Microwave ground chicken, onion, garlic, and chili powder in bowl, stirring occasionally, until chicken is no longer pink, about 5 minutes. Transfer mixture to slow cooker, breaking up any large pieces of chicken. Stir in tomato sauce, ketchup, sugar, hot sauce, 1/2 t. salt, and 1/2 t. pepper. Cover and cook until chicken is tender, 2 to 3 hours on low. Using large spoon, skim excess fat from surface of chicken mixture. Break up any remaining large pieces of chicken with spoon and season with salt and pepper to taste. Spoon chicken mixture onto buns. Serve.
Serving Size: Serves 4

We had chicken Tikka Masala with steamed rice. For dessert our neighbour baked a chocolate cake covered in melted Cadbury's chocolate as a thank- you for hubby helping them with a garden project It was so delicious I've asked for the recipe

We're gonna try some jacked up tuna melts. Try to make them fancy. It's a little blast-from-the-past for me, and not in a good way, so I hope they don't taste like my childhood.

Hubby brought ribs, potato salad, and cole slaw from our fave BBQ place----YUM! I'm going to try and resist the buttery, yummmmy grilled white bread that comes with it.....I have GOT to cut down on simple carbs!!! I love learning these foods I've never heard of---I had googled "Eaton Mess" before continuing this thread and seeing the answer....it looks YUMMY! (on yesterday's dinner thread, I was intrigued by "Apricot Fool" and "Hoppin' John"----) I'm STILL amazed that we have ANY info we want at ANY time, thank you, internet! Hoppin' John is a regular on my menu rotation. The boy(s) don't like it, so I make it when they aren't around. It is one of my top 10 favs. I started making a pasta primavara, but I had to fudge it a little because I was missing a few things. Then I ended up with too much pasta and not enough sauce so it is a little dry. But other than that, it is pretty darn good. I think I will make it again soon, but this time get it right.

I am cooking some chicken breasts with lemon pepper in foil packets in the oven to top our salads. It's the lazy way, I usually sauté the chicken with garlic and seasonings but the sciatica is acting up so lazy way it is. I'll do cubed chicken with bacon, cheese, grape tomatoes, olives, black beans, corn and jalapeño ranch on our salads. Along with a good sourdough.

I made fake blackened (baked) rainbow trout with pineapple mango salsa. Since it was just for me I didn't make any sides, although I do plan to have sliced strawberries later.

We're all doing our own thing tonight. I want a salad with tuna and boiled eggs, the youngest is gonna make himself a baked potato, my oldest is gonna make a deli style sandwich and my husband will probably make scrambled eggs with migas and avocado. Then we're gonna sit down and have a Marvel movie marathon! We saw the new Avengers movie yesterday and are still geeking out over it. I discovered migas in Austin last week! Delish! In fact, I was introduced to them by lindy with whom I had breakfast at Magnolia. My whole family headed over there for migas the next day.
