It's clean out the fridge night at my house. I have leftover salmon, leftover hamburger rice casserole and leftover pasta alla toscana to choose from What's on your menu tonight? ETA: My brother just asked me to go out to a fantastic local Mexican place for dinner Guess the leftovers can hang out in the fridge for another day

Just back from the pub and I forgot to organise something that would gently cook while we were out so it's grilled chops, pasta and steamed veg and gravy. It's a dish my mom made all the time when we were growing up. It has hamburger browned with onions, sliced carrots, diced potatoes and rice in it. It also has cream of chicken soup, water and soy sauce in it. It's certainly not healthy but it's filling and we love it

We're having Russian chicken pilaf (no clue what it will be like, but the recipe looks easy) and I'll probably roast cauliflower to go with it.

I have Splurge Club tonight with my ladies meetup group that I run ... we eat appetizers, dessert and enjoy wine Dd #2 is going to visit Grandma so it's just dh and dd#1 for dinner ... they are having high quality beef hot dogs with fresh buns and salad

Beautiful day to bbq some steaks, potatoes, veggies in foil as well as a baked (bbq) apple.
May 1st is a lovely day in Niagara today.
I went to visit the Falls today and they were glistening in the sun and mist. I love seeing the Falls, never gets old for me. I am sad that a lot of local people do not visit Niagara Falls whenever they can. It is a World Wonder, simply beautiful. Makes everyday a bit more peaceful and a bit more beautiful, especially when you see a rainbow, as I did today.

These thread always make me so hungry, and usually make me want something else for dinner, other than what I had planned, lol! Last night I made spaghetti with boneless chicken breasts. I am using the leftover meat to make panninis. Slices of chicken, vidalia onion, avocado slices and Swiss cheese on rye.

We had lasagne and ciabatta followed by gooseberry Eton Mess for dessert. What is gooseberry Eton Mess? That sounds interesting. We're having salmon burgers over an asian chopped salad. Eton Mess is an old English dessert made up of broken up meringue (bought or homemade) gently mixed with whipped cream. Strawberries are classically added and it's traditionally served in small glass dishes. Other fruits like raspberries, bananas, pineapples etc., can be used instead of strawberries.....and I used gooseberries today. It's so easy to make and is delicious. The name comes from the famous Eton College in Windsor as it was always served at their annual cricket match against another school - and still is.

Roast chicken. It's in the brine right now. I Plan to have peas, but have not decided whether to make risotto or roast some potatoes. DH is bringing cupcakes. Lucky he told me as I was about to make his favorite pie.

I'm going to improvise some taco/Mexican style stuffed bell peppers with things I have on hand. 2 big red bell peppers, extra lean ground beef, taco seasoning, mixed grains in a steamer bag (quinoa, barley, and red rice), and Mexican style shredded cheese blend. I'm gonna mix up the meat, grains, seasoning and cheese, stuff it all into the peppers, and top with salsa and bake until it's done. There's a can of spicy black beans in the pantry and that'll be the side dish.

Barbecued pulled pork sandwiches on potato buns, homemade hashbrowns (did you know you can use a ricer to squeeze out the excess water? I just learned that from Google) and for dessert chocolate ice cream with fresh raspberries

Hubby brought ribs, potato salad, and cole slaw from our fave BBQ place----YUM! I'm going to try and resist the buttery, yummmmy grilled white bread that comes with it.....I have GOT to cut down on simple carbs!!! I love learning these foods I've never heard of---I had googled "Eaton Mess" before continuing this thread and seeing the answer....it looks YUMMY! (on yesterday's dinner thread, I was intrigued by "Apricot Fool" and "Hoppin' John"----) I'm STILL amazed that we have ANY info we want at ANY time, thank you, internet!

We're all doing our own thing tonight. I want a salad with tuna and boiled eggs, the youngest is gonna make himself a baked potato, my oldest is gonna make a deli style sandwich and my husband will probably make scrambled eggs with migas and avocado. Then we're gonna sit down and have a Marvel movie marathon! We saw the new Avengers movie yesterday and are still geeking out over it.
