We're having a family get together while my big brother is still here. I'm bringing marinated pork chops and brats to grill, buns, calico baked beans,an assortment of chips, condiments and pineapple cupcakes with pineapple cream cheese frosting. My little brother and his wife are bringing beverages and pickles and my mom is bringing a big pasta shrimp salad.
What's for dinner at your house tonight?

Chickpea and cauliflower curry (I'm going to throw some fava beans in too which I prepped last night), we'll have it with leftover sticky rice

I've been craving watermelon like it's nobody's business. So I bought one yesterday and put it in the fridge last night.
It's just me tonight so I plan on cracking that bad boy open, sticking a fork in half of it and going to town on it in front of the TV.
I'm so excited it's kind of embarrassing!!!!

This recipe from Ina Garten: because my DH likes Ahi Tuna and I thought is sounded good. I couldn't find fresh tuna though, so I'm using frozen.

I found something in the store that translated to 'pork layer'. I hope that means pork belly, but whatever it is, it's marinating in a soy & stuff marinade till later, kind of based on an Emeril recipe. to be browned and pressure cooked, with coconut rice & salad. Hopefully it will taste like bacon if nothing else.

Pizza for us tonight. I found a new to our Walmart brand of pizza yesterday and couldn't resist grabbing a box. It's called Screamin' Sicilian and I have no clue how good it might be. They do have a hyped up website!

I was planning on crash potatoes - the ones loaded with bacon, chicken, green onions and cheddar cheese and oozing with buffalo-sauce goodness. But it's Cinco de Mayo so I might have to make those tomorrow night and get Mexican food tonight. Lisa

Meatball subs using the meatballs I made a few weeks ago and a jar of Prego because the one container of sauce I have left from the fall is way too much sauce for subs!

Dh said he wanted Mexican food tonight since it's Cinco de Mayo so I'm doing my Canadian version of chicken fajitas ... lot's of lime  The dd's can eat a sandwich

We had to visit the CPA today so it was a steak sandwich for DH and a good ole tomato sandwiches with lotsa mayo for me. A few chips and pickles completed the meal.

ground beef tacos, chips, and guacamole!! and peach margaritas... because it's Cinco de Mayo!! Which is true, but really, it's because we have leftovers from the weekend so I don't have to cook.

It's Cinco de Mayo, so beef and bean burritos with Mexican rice and a tomato/avocado salad. The kids don't care for the salad, so that means I get to eat a LOT of it

I'm having duck. as in "duck into the fridge and see what I can find." I watched the grandkids today and I'm pooped. DD is at work. DH's school is having a Cinco de Mayo thing, so he's eating there.

I ate some of the chicken and dumpling SOUP from last night (it was supposed to be regular chicken and dumplings, but my sauce never got thick so it turned into chicken and dumpling SOUP.) And now I am getting ready to start baking some chocolate cupcakes with cream cheese frosting. In honor of Cinco de Mayo of course.
