Being in Southern California, we do Cinco de Mayo!
So I am fixing cheese and shredded chicken enchiladas, Yvonne's mexican rice, and tortilla chips with salsa, guacamole, and nacho sauce.
Oh and beer for dh and I!

I'm having duck. as in "duck into the fridge and see what I can find." I watched the grandkids today and I'm pooped. DD is at work. DH's school is having a Cinco de Mayo thing, so he's eating there. Hey! I am also having duck tonight!  |

I wanted Mexican, but the 6yo wanted Panda Express and since he had more dental work done this afternoon and is still numb, he wins.  I'm.still.pregnant. I'm getting super ragey about it. So tonight I'm going through the fridge and pantry and pigging out on ALL the crap while I sit in front of Netflix! Enjoy yourself, because it's probably the last time for another 18 years.  |

I ate some of the chicken and dumpling SOUP from last night (it was supposed to be regular chicken and dumplings, but my sauce never got thick so it turned into chicken and dumpling SOUP.) And now I am getting ready to start baking some chocolate cupcakes with cream cheese frosting. In honor of Cinco de Mayo of course.  Poor thing, you seem to be having trouble with chicken and dumplings lately  |

Poor thing, you seem to be having trouble with chicken and dumplings lately I know!! I can't for the life of me figure out which step went wrong! I lost my dumpling mojo. It's going on the back burner (so to speak) for a while. Although I am tempted to make them every night until it works. Just goes to show you, even when you think you are a good cook you run into something that brings you to your knees. Even when you have made them perfectly 100 times before. |

We had an almost lasagna - I only added grated cheese for the cheese layer - with a red romaine & arugula salad.

We're having a family get together while my big brother is still here. I'm bringing marinated pork chops and brats to grill, buns, calico baked beans,an assortment of chips, condiments and pineapple cupcakes with pineapple cream cheese frosting. My little brother and his wife are bringing beverages and pickles and my mom is bringing a big pasta shrimp salad. What's for dinner at your house tonight? Holy crap. When we have a family get together I bring chips OR buns OR a salad. |
