I have a work day on Monday with about 12 people. We're doing a lunch potluck and I'm trying to come up with a dish. I was thinking maybe a green salad with some turkey, ham and cheese on the side for do-it-yourself chef salads. Does this sound okay? Any other ideas? I'm wheat intolerant and two others are watching their carbs.

I think that's a great idea. I would also include hard-boiled eggs (chopped or in wedges) to add to the salad, and maybe croutons, too? (Croutons on the side, for those who eat wheat/carbs.)

YES! There are never enough GREEN salads at pot lucks IMO!!! and thank you for putting the meat on the side!

Sounds like a winner! I would bring a couple of different types of dressings too - maybe a vinaigrette and a blue cheese or Caesar.

what about some chicken salad bar [chicken mixed with yogurt or mayo] and then have add ins like grapes, celery, almonds, dried cherries, cheese, avocado etc...that everyone can mix themselves to their taste. then eat it in croissants, tortillas or just plain in a bowl...
