One of my oldest friends became a grandmother for the first time last Monday. I invited her and her DH, the new mommy and daddy and the baby over for dinner tonight. I can't wait to snuggle that baby! The whole family are foodies so I'm making Thai tonight. I'm making a hot pork and peanut dip for raw veggies to snack on with cocktails and then for dinner I'm making shrimp pad Thai and Panang curry chicken with steamed rice. The new mommy loves sugar cookies so I made butter vanilla bean cookies last night and will serve them with the fresh raspberry ice cream I made this weekend. I spent the whole morning in the kitchen, my table is set, the vegetables are all prepped, shrimp is cleaned, chicken is marinating, the pad Thai sauce is cooling, the serving dishes are out and everything is ready for showtime! I'll have the dip ready when they arrive and will be able to throw everything else together while they're snacking on it What are you doing for dinner tonight?

Wow! What lucky friends!
I'm trying a new recipe - beet green strata. DH loves beets, and the beets we bought at the market on Saturday were attached to some unusually attractive greens. The strata is made with eggs, a loaf of bread and Gruyere cheese, so I'm hoping for success. I'll probably roast some asparagus as my side, and we still have strawberry pie.

Dh feels like grilling again tonight so we're having grilled salmon and steak with caesar salad and the roasted asparagus that I was too lazy to cook last night

Coming to your place for dinner akathy! I was going to post the exact same thing! It sounds great akathy! Since i'm not actually invited to akathy's, we are going to BBQ. DH has the day off so will go to the butcher so I won't know what we will be grilling until later!

Tonight is my first night in my new place. I'm so excited! I also get my new bed delivered tonight, so no sleeping on the floor. For dinner, I'll be bringing some type of take out home. I don't have a fridge yet. That's the last thing I need to buy. Everything else will be loaded up on a truck and delivered next weekend. I'm thinking I'll get something yummy, like Chinese. Perhaps Sesame Chicken.

I am going to have meatloaf, baked potatoes and lima beans. I have to say I feel guilty now about only having one veggie but with just the two of us more would be a waste of food.

Italian sausage, peppers, and onions, and possibly spaghetti with olive oil and garlic. Still trying to figure out frying pan logistics to see if I can make it happen!

Left over bbq chicken (the sauce, not the grill) mac and cheese and peas. Actually it was a late lunch/early dinner and it was yummy.

We're having parmesan tilapia with spicy lime black beans and steamed broccoli.
In theory it's a quick 10 minute meal - yeah, we'll see how that turns out ;-)

We're still house hunting so are going to check out a few neighborhoods in a neighboring town this afternoon. Which means we can grab some tacos at one of the local taquerias while we're out driving around. I saw a home online that has a creek in the backyard that I'm really looking forward to seeing!

I seem to be having some anxiety attacks today and I have to go to the nursing home to see my MIL, so I will probably just grab takeout. I hate days when I let things get to me.

It's open house at my son's school tonight. We really want to go and check out his Kindergarten class. There is going to be a scavenger hunt and one of the prizes is $1000 off tuition for next school year. I sure would love to win that prize If we do end up going, we will have a super quick and early dinner since it starts at 6. So most likely yogurt, toast and fruit.

I hope your anxiety passes and tomorrow is much brighter. I will probably have leftover salmon and sweet potato...yes I eat this way more than I probably should. I am also craving bread pudding so I may just got to the bar and have a slice and adult beverage.

AKathy, you make me wish I entertained more. Actually, any entertaining would be more than I do. I feed extended family all the time but I almost never invite non-family guests to dinner. Your dinner party sounds lovely and it's such a nice excuse to cook a fabulous meal. I'm not sure if my boy will be here tonight but if he is, maybe I'll make BBQ-style baked beans (from a can) for him. He likes them and I also have fresh artichokes, which he loves. Otherwise, leftover chicken and noodles. I'd give him that for dinner, but I already fed it to him for breakfast so I feel that might be overkill.

My parents are coming to visit on Thursday, and I've already cleaned the kitchen, so I told DH he's not allowed to cook anything until they arrive. lol. We're having Mexican tonight from a local place. Oldcrow made me crave meatloaf, though - that might be dinner on Thursday.

We had shrimp and a big garden salad. I'm craving something white (I've been doing Sugar Busters about 90% of the time for about 6 weeks now...no sugar, flour, rice, pasta, or white potatoes). The payoff is the 10 pounds I have lost but it's really hard sometimes.

going to the movies tonight. I hate theater food and I don't like the surrounding restaurants. I usually sneak in my favorite snacks but DH like to eat at one of the food places next to the theater before we go in.

I pulled a steak out of the freezer but we don't have much in the way of sides. I'm hoping carne asada quesadillas will be good enough because I don't feel like going to the store!
