I'm making Lemon Delicious Pudding, and the recipe calls for 3 eggs. I only have 2 eggs. Do you think it would make much difference if I only use 2? I have already been to the shop once to get stuff for dinner, I don't want to go again.
I guess I could always find another recipe that only uses 2 eggs.......

I don't know the recipe but it probably would make a difference yes. Is it sponge? Can you scale down the quantities? Or ask a neighbour?

Yeah, good point, it's a sponge so I'd better stick to the recipe. Every other recipe I found uses 4 eggs, so 2 will not be enough. Bugger.

Just divide everything into thirds and then make 2/3rds of the recipe.

I know it is too late and my answer doesn't matter, but I cut recipes in half or thirds all the time to match what ingredients I actually have on hand so I don't have to go to the store. ETA: I sure would like to see the recipe for Lemon Delicious Pudding!!

Too late for your pudding but dredged up from the depths of my memory, I thought I read somewhere (confident, aren't I?) you could substitute a tablespoon of white vinegar for an egg. I've never tried it.
