We are into baseball season now, which means that we have baseball games four nights a week and several tournaments coming up. We are trying to eat healthy, but I am struggling to come up with a variety of meals for us to eat on nights when I am rushing from work to pick kids up at daycare and stopping home for a short period of time to change and grab what we need. When we have sandwiches, the kids are saying they are hungry throughout the whole game. I bring healthy snacks but need healthy meal ideas as well. Any suggestions? I usually only have a few minutes at home in between work and games, but my older two kids are home for a while after school, so if there is something they could make for everyone that would be helpful.

I use the crockpot on nights like those. Everyone can eat when they have time.
BBQ chicken sandwhiches, pulled pork (sandwhiches or tacos), soups, roast, etc.....

Are you able to do food prep on the weekend? I usually make 4-5lbs of chicken on Sunday. Depending what roation we are on, sometimes I bake up seasoned chicken breasts or sometimes I do "tex mex" style in the crockpot. I also make a couple pounds of ground beef. Alton Brown has great recipe for baking brown rice, I always maybe a pan on Sunday. This way when the kids come home they can make chiptole style rice bowls or tacos or start re-heating it.
Do they like meatballs - I do the same thing 4 or 5lbs and I keep them in the freezer in ziploc bags. The night before I take one out and let it defrost. We can come home and make meatball subs, they are little more hearty than a sandwich with lunchmeat. You can also make some pasta the night before and then they can reheat with sauce/meatballs. Only takes a few minutes to re-heat.

Game nights for us are usually: Shrimp tacos Fish Barley/bean/veggie salad Chickpea curry Meatballs (I make a huge batch and freeze in individual portions) Beef or chicken enchiladas (again, I make a couple of pans and freeze)
All of the above can be ready in about 15 mins, which gives me enough time to prep and cook some veggies or salad to go with it

I did crock pot meals and leftovers a lot for those nights. But 4 nights? I'd probably do leftovers one night, a crock pot meal one night, a sandwich another night, and drive thru one night. That's a lot of fast meals!
There's nothing wrong with sandwiches. Just make it a complete meal--sandwich, an apple, some pasta salad/chips/starch, and maybe a small treat. If you throw a bite sized Snicker treat in there, I bet those sandwiches will look a whole lot better!

On practice nights here, I usually do something in the crockpot or sandwiches. Something quick and easy because they get home so late. They grab a quick snack to go in the car on the way to practice, but then eat a late dinner at home. It's only one day a week right now, otherwise I'd have to switch it up because I don't like to eat so late! The other night DD#2 and I went ahead and ate dinner without DH & DD#1 because her practice went over so late! I felt bad, but we were starving and dinner was in the crockpot.

Leftovers? Or, rather, preplanned leftovers? I would probably grill extra chicken /meat the night before and let them make it into a chicken breast sandwich on a hamburger bun. Veggie sticks and I'd call it good. Kids are always eating junk at my kids' sports though so for my kids " I'm hungry" is code for " I want a treat".
