I am ready to buy into the Avery Elle method of storing my stamps, but I feel terrible about throwing away all of those beautiful pieces of maple that the stamps are mounted on. Has anyone found a use for them?

you could reuse them in some way - home decor type project, or offer them for sale/trade here or on say Split coaststampers. People who buy unmounted rubber stamps might be interested in them.
