I never make beef enchiladas (only chicken and cheese). I'm looking for a good recipe. It can be ground beef or shredded beef. I may not be opposed to a casserole type recipe either.

I would also love to know your favorite cheese enchilada recipe.

DH is having a big birthday and will have about 13 people over for dinner. Need a few options. Make ahead ideas would also be appreciated.

Will also be making taco salad, baked jalapeno poppers, cheese dip and chips and guacamole. Hope to make Yvonne's Mexican rice and some sort of beans (refried or black beans).

I like her sour cream enchiladas (sour cream and cheese mixture). A little messy to make but worth it.
