We had a late lunch so dinner will be simple. Italian beef (from freezer), roasted red potatoes, fruit, and some cookies my mom made.

We are celebrating my mom's birthday tonight. She requested takeout from a Thai restaurant and brownies with ice cream for dessert. I just made double chocolate brownies and bought salted chocolate caramel ice cream.

I spent three hours getting DD #2 to band camp, checked in, auditioned and such. We have decided to eat out tonight... sushi!

Shredded chicken tacos. Already boiled the chicken this afternoon so I just have to shred it, reheat is, cut the lettuce, tomatoes and onions, and cook the refried beans and taco shells. Oh and I bought pre shredded cheese. Easy. This weekend is all about easy!

Fresh southern "cooked to death" green beans with new potatoes, Swiss steak, fire roasted corn (from a can), deviled eggs, and Sister Schubert rolls.

akathy, you are so pretty. I love your new avatar. Oh, chicken tenders, steamed rice and roasted veggies. As a treat for one teen I might make Pioneer Woman's chocolate dipped s'mores. Sometimes even moms can be cool.

Tomorrow younger son heads off to Philmont w/his dad (yes, I know about the recent tragedy there and am trying desperately not to think about it) so for his final meal at home (for a few weeks anyway) he requested Nacho Pasta. His mother forgot to buy the ingredients yesterday, so I cajoled his brother to sneak some of the sauce out of the restaurant while he was at work today. All I had to do was cook the pasta and I had a yummy meal. Can't beat that, lol. Older son & my husband will be going out to dinner since they won't be seeing each other for a few weeks. Not sure where they're headed yet.

We had homemade lasagne from the freezer with no sides because ...... I did a patisserie cookery course today and made to bring home Choux buns with lemon chantilly cream Mille Feuille with fresh cream and raspberries Chocolate tarts with pistachio sprinkles Pistachio Madeleines dipped in chocolate Apricot and cherry mini tartlets Creme patisserie tart topped with glazed strawberries Needless to say we tried one or two Sounds like a wonderful class! We have had an explosion of microbreweries and tap houses in the area, so we are going to check out a newer one tonight.

We had spice-rubbed seared salmon, chipotle jack mashed potatoes and steamed broccoli.
I did a lot of cooking today - I also made easy no-rise cinnamon rolls for breakfast and tried a knock off recipe for Chick Fil A's chocolate chip cookies for dessert after dinner.

I made dinner for my mom and sister, and we watched hours of Masterpiece and other PBS stuff I had recorded. Slow cooker BBQ ribs, loaded baked potato casserole, zucchini, fruit salad, and banana pudding for dessert.
