I have a bunch of blueberries that are not being eaten in my house (burned out I guess), and I don't like blueberries at all. But I was thinking about surprising my family with some blueberry muffins this afternoon. Not caring for them or muffins in general, I don't make them often, and I've never made any with fresh fruit before.
Anyone have a favorite that turns out every time?

Alright! I'm going for it! I have FOUR cups of blueberries so I'm going to go crazy and put a bunch in the freezer and take some to neighbors. Thanks for the recipe!

Oh, other thing - muffins freeze VERY well! You can make extra and freeze them in saran wrap individually. It also works as a "bread" recipe, just make it in a bread pan and cook longer. If you have a quick-read thermometer, between 197 - 205 is a good temperature to pull quickbreads out at.

I tried a "to die for" recipe from the old 2Peas board awhile back and wasn't terribly impressed, but I'm not a blueberry fan anyway. I made them for my bluberry muffin-loving grandson, who wasn't overly excited either. Anyway, AN this recipe sounds much better so I'll give it a try too. Thanks!

This is the Blueberry recipe that I use:
1 & 1/2 cups flour 1/2 cup sugar 2 tsp baking powder 1/2 tsp salt 1 egg beaten 1/2 cup oil 1/2 cup milk 1 cup blueberries
Add dry ingredients and blueberries together. Beat an egg in a small bowl. Add milk and oil. Pour liquid into dry ingredients.
Bake in 400 degree oven for 20 minutes.
They are good but are not overly large.

I use the blueberry muffin recipe from this blog: Top 10 Muffin Recipes. It's incredible and very easy!! She makes regular size muffins, and I make mine in a jumbo muffin pan - both are great!

No but my blueberry bushes are so full I'm begging people to come help themselves. I picked 7 gallon size bags this weekend and froze some. Gave some to my mom and told my neighbors to please come pick some. I have 6 huge well established bushes . Now if my pears would hurry up. I also have a ton of figs. My scuppernong grapes prob won't be ready till August and since last year was a great year I'm not expecting much this year but it will still be plenty as my vines are probably 10ft or more and established. I haven't checked the wild blackberries as they are rather far back in the woods but I usually have a ton of those too.

I think the recipe I use is from Ina Garten or Martha Stewart it uses buttermilk and lemon zest. So yummy. Have to google to find recipe!

Betty in the Box is my go to Blueberry muffin...
Save the can of blueberries that come with it for pancakes (they are little bitty and perfect for BB pancakes. Dump a box of fresh blueberries in the mix. Sprinkle sugar on top of the muffins before baking to give them a crisp top. Don't overbake!!!!
People will think you are amazing.

I use a Tastefully Simple Beer Bread Mix, add a blueberry beer, throw in some blueberries and I'm good to go.

I'm lazy, I just use pancake batter and my mini muffin tins and put a few blueberries in each or chocolate chips. They're really only good fresh though.

I made the first recipe tonight and they are a hit in our house! (I tasted the top and it was amazing so it's best for my waistline that I don't like blueberries) thanks for all these choices, i actually ran out of sugar today so I still have 3 cups of berries to use and I think I will try another one tomorrow. Also please don't judge my bad Instagram food photography, I have no idea how to make that stuff look good
