1. spice well - both your meat and masa 2. make sure your meat is not dry 3. use a steaming pot 4. don't forget you can freeze when they are done 5. the more help you have the quicker and funner it is...l(we make tamales every Christmas Eve, it's a family tradition and has been for over 50 years) Usually take about 4hours or so with about 6-7 people and we make about 12-16 dozen.

My mom used to get together with my aunts and make tamales around Christmastime. I would watch and always thought they seemed to having sooo much fun.
This past December my son's senior class decided to sell tamales as a fundraiser. I immediately volunteered thinking it would be a fun, bonding time with my son and his friends and their parents. We made 150 DOZEN. It was harder than I thought. Granted, the amount we had to produce was insane. Prior to my tamale adventure I would often think that tamales were overpriced. Now I don't think anyone charges enough!!
My advice would be to make sure you have enough time in your day. It took us longer than we expected. Also, have several people there helping you. I think that my mom and her sisters did it right because they all worked together and the laughter helps as a stress reliever.

Beef dries out more easily than pork. I use a combination of both. I cook it in my crockpot. Afterwards, I strain the juices and use that to season the masa. I also whip the lard (Crisco) before adding it to the masa. Also, make sure you spread the masa evenly on the husk so they'll steam thoroughly. My sons helped me one year and we quickly ran out of masa. Then I realized they had plastered it onto the husks! Let us know how they turn out! Have fun and be patient with the process. They're a lot of work.
