Friday evening , I made some homemade fried pickles in my fryer. Once the cooking oil was cool, I poured it back into its original container so I could throw it out. My sister said I am crazy for not reusing it, but honestly, I maybe use the fryer once a month, so I would rather just buy another bottle of vegetable oil than risk getting sick.
So, who's right? Am I being paranoid about some imaginary sickness we can get from reusing cooking oil? My sister is not a cook, so I am wary to trust her recommendation, lol !

I always leave the oil in the deep fryer until it get dirty looking. We have never gotten sick from it. The pickles might have flavored the oil though.

If you ever fry a turkey, you quickly learn to strain and reuse the oil!

I mainly use my fryer for French fries so yes, I strain it, store in fridge and reuse several times.

Most of the old school cooks will tell you to strain it and store in a cool dry place (like the refrigerator) for reuse. (ETA: my mom has an old coffee can that grease gets poured into in her refrigerator that has been there since the days of...well...coffee that came in big tin cans. LOL)

You can strain and use it again in a short amount of time but if it's something you rarely use, then I wouldn't keep the oil long term.

I put the container in the pantry, would that turn it rancid if it wasnt in the fridge?

Probably not...but you will know very quickly if it has turned. It will smell.
I would keep it in the refrigerator from now on, you will be able to keep it there for what will feel like forever. LOL

As kids we had a fry daddy which we just kept the shortening in it between uses. I remember taking the cover off and seeing it solid but then watching it melt once it was plugged in.
Now as an adult I definitely keep my oil to reuse for frying. You can easily get 2-3 cookings from it though it does depend on what you are frying. Fries, can use lots. Onion rings, OMG sooo good when you dip them in pancake flour for the coating, that tends to get the oil pretty dirty but when you strain it just don't dump all of it, wait until you reach that spot in the oil. I have always put it back in the bottle and just left it in the cabinet. Never went bad.

Like vcr1995, I leave it in the deep fryer and change it when needed. I usually get 4 - 6 uses out of my oil, depending on what I've fried.

I'd toss it. I like starting with fresh, clean oil and it doesn't cost enough that I'd be willing to get sick over it. Plus even if it's strained, it'll still have some carry over flavor from what you last cooked in it. I wouldn't be willing to compromise the taste of whatever I was frying next time around.

Funny story about reusing oil. My Aunt always reused her oil and poured it back into the container.
One Saturday she made a cake to take to church the next day and my other Aunt decided she was going to taste it before it went. So she snuck a small piece and when she took a bite, she spit the cake out and said what is wrong with this cake! Turns out my aunt had used the old oil that she had fried fish in! Good thing the other aunt was sneaky!

I very rarely fry, so the oil tends to go bad between uses. If I fried regularly, I would keep the oil, with the caveat being that fried pickle oil tastes like pickles, so the next thing you fry would have to complement that.

My SO and I run two restaurants. The fryer oil is used for a week! It gets heated so hot that it has to kill anything dangerous, right?

We reuse oil in our deep fryer all the time. It is stored in a dark pantry, and we HAVE NEVER had a problem or became ill from reuse. We use it for chicken strips, french fries, etc. We will reuse it until we know it has been used enough, then dump and replace. Never strained it, or put it in the refrigerator. Now if we cooked fish in it, it would be replaced, but we don't do that.

My deep fryer cleans and strains the oil every use. It stores it in the bottom and then you just pour it back in. We use it for at least 2-3 frying times and then change it out.

I don't typically fry anything so if I did, it would be a very long time before the oil was used again so I would toss it. But, I don't know anyone who fries food more often that toss it and start fresh every time. Most of them leave it in the fryer.

I don't use a deep fryer ... afraid of those things In your situation I would probably throw the oil out ... I do keep bacon drippings in a jar in the fridge ... we spread the grease on our roast beef before we put it in the oven ... soooo good

I've always reused the oil and left it in the fryer until it gets dingy or I fry something that's going to leave a taste on other foods. So in the case of Pickles, I'd probably save it in the bottle to use several times for just pickles.

Looks like it is almost a split decision ! I think I will probably throw it out this time, since it probably tastes strongly of pickles Next time I will strain it and put in the fridge to reuse. Thanks, ladies!
