I just checked my fridge and found a pound of bacon, cauliflower, broccoli, carrots and celery. I have onions in the pantry. So I'm going to cook up the bacon and then add my veggies to sauté in the bacon grease. I've never made it before but how could you go wrong with bacon grease, right? What are you planning to eat tonight?

We are having dinner with friends tonight, and I'm taking dessert. DGD is here for a few days, and she made Paula Dean's " not yo Momma's banana pudding" and put it in my trifle dish. She feels like she created a masterpiece!!!

We had chicken tikka masala with pilau rice, followed by a slice of Costco sheet birthday cake.

I was having leftovers...but my son and his girlfriend dropped by last night to borrow the car for today..and almost cleaned me out!! (with my permission).. so something with cauliflower or faijitas....

DD13 has really wanted to help with meals this week, so she has asked to make pancakes. I'll fry up some sausage and we'll have fresh fruit, too.

Got some refried beans going in the crock pot that we'll have with chicken ranch tacos, and maybe some Mexican rice. Maybe peaches or leftover chocolate cake for dessert.

My in-laws are taking us out for my birthday. They came to my office and brought me a lobster roll for lunch, complete with coleslaw and fries and I'll be ordering a steamed lobster tonight. Tomorrow dh is getting me a 3 pounder from the fish market... after all, it is my birthday week

This week's summer camp for the boys doesn't start until 9:30, which means I have a lot of time to kill in a morning. So, this morning I made a chicken and potato enchilada casserole (never made it before, but it looks yummy) and I even French cut a boatload of green beans. Tonight I have a XFit class, while I'm gone all dh has to do is throw the casserole in the oven and steam the beans. Voila. Dinner on the table in record time!

Shrimp scampi and cajun salmon. Steamed broccoli Rice with parsley Younger ds doesn't like shrimp, so I am mostly making the salmon for him. I think I need to buy some really good bread from Wildflower as well since I have to go to Target anyhow and it's just across the street. .... Tomorrow dh is getting me a 3 pounder from the fish market... after all, it is my birthday week And what time shall I meet you for dinner? Happy Birthday, btw! The son who's been away for a while has requested Manwich. I'll be pulling out my deep fryer for some curly fries to go along with it. I can pretend we'll eat the cherries & grapes that are in my fridge, but we all know it will be Oreos & ice cream, lol.

Breakfast for dinner. Yesterday I was up in the mountains and bought a bag of my favorite stone ground grits. I'll make cheese grits tonight and maybe just serve it with a fruit side. We've gotten in the habit of eating a really light dinner this summer. If you have an opportunity to try real stone ground grits, do so! It makes the instant crap you buy in the store taste like sawdust. If you are outside the South, do you even have any idea of what I'm talking about?!

I could also pretend that I am eating something healthy, but the reality is that I am sitting here eating chocolate mint chip ice cream out the container. Breakfast for dinner.
