There were some apricots in my Bountiful Basket this week and they needed to be used. I puréed them, added a bit of sugar and cooked them down until they were about the texture of a jam. I'm going to mix it with some Russian dressing and 1/2 package of onion soup mix, brown some pork chops, pour the sauce over and finish cooking in the oven. I was at a local vegetable store bright and early this morning so I'm making creamed peas and new potatoes to go with my pork chops I adore creamed peas and new potatoes! What are you doing for dinner tonight?

Grilled homemade hamburgers & corn on the cob. Ice cream sandwiches for dessert.

Sounds delicious akathy. I am actually hoping to get out of cooking tonight. I want to go to my favorite Italian restaurant, but DH is competing tomorrow morning so I think I might have to make spaghetti for the carb load. We'll see.

I changed my mind last night and did not mash my potatoes and I cooked some extra. So tonight we are having leftover roast pork, fried potatoes and I will fry the leftover broccoli with them.

Ds' game was rain delayed, so we had a very late lunch at Firehouse Subs. We have a friend who is in the same tournament who we haven't seen in a while, so we had planned to have dinner with them. Waiting to hear from them to see if their games were running on time. We may not be terribly hungry, but the company will be good.

We're having shredded zesty chicken in buns, a veggie platter, a fruit platter, potato salad, and I'll throw more things on the table trying to pass sandwiches off as a dinner. (There are those in my household that think sandwiches are on the list of "Things That Do Not Qualify as Dinner.") Oh, and there are chocolate cupcakes for dessert.

It's so hot here today!!
We are going to grill out hamburgers and I bought some fresh corn from the farmer up the street. I have some leftover baked beans and some premade potato salad to go with it.

This is a touchy subject today. I was at Costco (a place I hate to go)in order to get the normal stuff. I was going to also pick up a pizza for dinner, cause dh and the teens love their pizza. I went to pay and forgot my pin number. Just completely lost it in my mind. The malnutrition is causing some neuro stuff and it's very upsetting and annoying. Long story short, the new plan is tacos and I'm thoroughly annoyed at myself and my disease.

We are having grilled Italian sausages with grilled onions, corn, asparagus, peppers and zucchini. I feel like I make this at least once a week in the summer, but everyone loves it and it is so easy.

I have two options... I already have everything together for greek-style meatballs with tzatziki sauce + wedge salad, or I have chicken fajita leftovers from lunch. Still on the fence about which way I will go.

I'm at my DS1's house keeping the girls for the weekend. I didn't do any grocery shopping so tonight it's peirogies and Brocolli. Not my choice but it will be good. We spent the day at the pool so quick and easy sounds good.

lucyg got me all hungry for a Chinese type salad.. So it's made and sitting in the fridge until dinner - It has chicken, pasta, a few veggies and a ginger soy sauce. Hope it's yummy because I just threw it together.

DH is bringing home Chinese food, which we only have when DS isn't around (he has a severe peanut allergy)... DS is at scout camp through Sunday, so Chinese it is tonight! Lisa B.

Running around kind of night so made something people can heat up at will: fresh cheese tortellini tossed with broccoli florets and sliced italian chicken sausage. Sauteed it all together with some olive oil, a little buttah, some white wine and parmesan cheese.

I just had a late lunch of tuna, straight from the can. Tonight is the cocktail party for my 40th high school class reunion, and appetizers have been promised. We'll have to pick up something to eat afterwards, perhaps something, uh, greasy. I'm supposed to run the 5K tomorrow at the state games!

We ordered Chinese food from their lunch menu and will heat it up for dinner. Saves us about $10-20 bucks.

I am babysitting my niece tonight and since her mom and dad will be out until after bed time I am going to their house, usually she comes here when I watch her. Her mom has promised to stock the pantry with all of my favorites, so hopefully that means sour cream & onion chips! Depending on how late they are out I might stop and get a burrito on the way home.
