I'm going to a bbq potluck and want to bring something a little less typical. Have you tried anything new lately that would be good? Doesn't matter if it's an appetizer, a side, or a dessert, anything but the main dish has been requested. Thanks!

I usually make no bake chocolate eclair cake or grape jelly meatballs for potlucks.
I can't add recipes at the moment but a simple google search will pull it up

I have been bringing roasted vegetables and they are well received and no one has duplicated. I cut up whatever vegies I pick into sizes where they will cook at a similar rate (if you aren't sure keep them separate and watch and remove from oven accordingly) put in a ziplock(s) with some olive or avocado oil and balsamic vinegar (add salt and pepper if you wish). Refrigerate until ready to cook. If I know I will have time, I cook before leaving or you can cook ahead and reheat. I think they are best room temp. Ideas for the vegies: Cauliflower, broccoli, brocollini, green, red, yellow peppers (or those bags of small sweet red-orange-yellow peppers), onions, asparagus, zuchinni -- basically any vegetables you like. Costco is a great resource. Bake in the oven at around 400. If I don't want to heat up my house I will do on our grill in a disposable or foil lined pan. I don't really have a recipe but you can search for roasted vegetable recipe and get more direction. I always make way more than I think necessary but there are never any left. I like them a little charred--evidently so do others. Mix them up or lay out on platter in sections so people can avoid what they don't like. Hope that helps, Keesha

Pasta salad with arugula, cannellini beans, sun-dried tomatoes, and shaved parmigiano Reggiano with a dressing made of pesto and white balsamic vinegar. The recipe also called for pine nuts but didn't include those.

I was hungry before I started looking at recipes and now I'm starving! You've all been a huge help, lots of ideas, now to narrow it down. Thank you all!
