Pork & Peanut Dip 1/2 pound unseasoned ground pork 1/2 cup coconut milk 1/2 cup water 1 tsp. oil 2 Tbsp. crunchy peanut butter 2 Tbsp. brown sugar 1 Tbsp. fish sauce 1 clove garlic, minced 1/2 tsp. curry paste 1/2 cup diced carrots 1/2 cup diced water chestnuts Roasted chopped peanuts Chopped cilantro
*Heat oil in medium skillet. Brown curry paste and garlic for a few minutes.. Add ground pork and stir fry, breaking up any large chunks. Once pork is cooked through, add coconut milk, water, brown sugar, fish sauce and peanut butter. Mix ingredients and bring to a boil, stirring. Turn off heat and stir in diced carrots and water chestnuts. Transfer to serving bowl and top with chopped peanuts and cilantro. Serve dip with crunchy vegetable slices (cabbage, carrots, green beans, cucumbers, etc.) This can be served hot or at room temperature.
