We are headed to the beach Sunday and I will be packing the cooler for lunch/snacks. Generally I've packed sandwiches, some chips, and some fruit along with water, but I was hoping to switch it up a bit and bring something else. Any fun suggestions? Thanks!

You pretty much have my menu already. We make baby sandwiches in the Kings Hawaiian rolls and wrap them in twos, so people can grab throughout the day as the want, along with fruit, chips, water, and I like to make brownies and pound cake that I cut up into bite size pieces to nibble on.
My goal with beach lunches is easy to eat, doesn't require any kind of plates/utensils, can be eaten whenever someone wants to grab it, and can be placed in your lap to keep the damn seagulls from stealing your food.

Shrimp salad po boys, or chicken salad. Easy/peasy would be the name of the game for me at the beach.

I try not to take anything that sand is going to "stick" to if someone kicks it up, so we usually do the sandwiches, chips and drinks. Maybe brownies for dessert. I wouldn't take cream cheese or hummus because I could easily see sand getting into it and ruining the whole thing. OK, to be fair, I wouldn't take hummus anyway because I think it is revolting!

We love cold fried chicken - so my go to beach lunch is chicken tenders from the Publix deli, cut fruit, and pringles
