Costco's salmon stuffed with crab dressing, fruit salad and a green salad or green beans. Yummy! And there is always enough left-over for lunch the next day! Oh this sounds soooo good! I wish salmon wasn't so expensive. We are having pan-fried pork chops, zucchini pancakes and fresh corn on the cob. I love corn season!

I'm making Steak Fajitas, black beans and rice tonight. akathy the chicken from last night turned out really good and it was so simple to make. I wrapped each chicken breast with 2-3 slices of bacon (I partially cooked the bacon because I read that otherwise it didn't get crispy enough) then I made a marinade of honey and dijon mustard, poured it over the chicken. I basted it with the sauce every 10-15 minutes or so. About 10 minutes before it was done I topped each breast with 2 slices of mozzarella. The chicken was very moist and flavorful. Definitely a recipe I'll be making again At what temperature and for how long did you bake it?

I picked up chicken fried rice and crab rangoons from a favorite Chinese restaurant. Of course, it's two hours later and I'm hungry!

Trying a new recipe tonight... Chipotle Meatballs. Supposed to be in the slow cooker but I have it on the stove top now. Serving it with roasted asparagus and mashed potatoes.

We're getting 5 meals out of it at a cost of about $3.50 a serving.

Tonight it's crockpot, chicken tacos. The kids have snubbed the idea of it, so they had plain cheese quesadilla's. I guess that means more leftovers for DH and his coworkers tomorrow (it's their favorite!).
I did make fried corn (corn on the cob, cut off, fried in a skillet with a little milk, salt, pepper, and butter).
And the crockpot tacos are chicken breasts in the crockpot with a jar of salsa and a packet of taco seasoning cooked all day, then I add a brick of cream cheese about an hour before it's finished. We make it into either BIG burritos with lettuce, tomato and sour cream, or into smaller quesadillas with any of the stuff above. I did make some rice tonight, it was the boil in a bag rice, when it was finished cooking, I added some of the broth of the chicken tacos to it and a half can of rotel. There will be tons of leftovers, which DH's coworkers love!
