Monday night I ended up staying and making an impromptu dinner at my friend's house so I didn't eat my leftover meatloaf muffins. They're at the eat them tonight or toss them tomorrow so I'll have those. I also have two leftover baked potatoes so I'll dice them with some onion and banana peppers and fry them so they get all crispy. I have some broccoli I'll probably just sauté until crisp tender to feed my recent broccoli addiction I was invited last night to a girlfriends get-a-way at the lake this Saturday through Tuesday so I'm scrambling trying to figure out what all I need to bring. All the girls are from out of state except two of us so the burden of food is on us. I think there will be from 8-10 of us and it's always a last minute thing because the out of staters have coordinate their trips. My other girlfriends lake get-a-way is on next Wednesday through Friday so I'm not sure if I'll stay at the first one until Tuesday. I have a lot to do for the other one too The nice thing is the gal who owns the cabin is in both groups so both of them are at the same place. I can leave some stuff there to use for both parties. These are my two favorite summer things!! How about you? What're you up to and whatcha eating tonight?

I'm going to try a creamy lentil and spinach dish that someone shared here recently. And I think it's funny/cool that you have TWO girls lake getaways back-to-back! Being an introvert, I'd prefer a break between the extreme social situations, but they sound so fun. ETA Here's the recipe: One-Pot Creamy Spinach Lentils Author: Pinch of Yum inspired from Jamie Oliver's Food Escapes cookbook Serves: 4-6 Ingredients 2 tablespoons butter, oil, or (wait for it) bacon grease half a yellow onion, diced 2 carrots, peeled and chopped 2 sticks celery, chopped ½ cup dry white wine 2 cups uncooked lentils, rinsed 2 medium Yukon potatoes, chopped (about 1 cup total) 4 cups chicken broth (plan to add a few more cups as needed while cooking) 1 bay leaf a few sprigs fresh parsley a few springs fresh thyme ½ cup half and half 3-4 cups packed fresh baby spinach salt and pepper to taste (be generous with the salt!) olive oil and red wine vinegar for topping Compare to a 2015 Prius Get Prius at a Low APR Thru 9/8. Compare Prius to the Competition! More at www.toyota.com/Compare/Prius-LEAFInstructions Heat the bacon grease (that's what I used) over medium heat. Add the onions, carrots, and celery. Saute for 10 minutes until the vegetables are nice and roasty and fragrant. Add the wine slowly - it should give a little sizzle and get all the browned bits off the bottom. Add the lentils, potatoes, and broth. Tie the bay leaf, parsley, and thyme together and toss in the pot (the reason for tying is so you can easily remove them at the end - I actually wrapped mine up in a stalk of celery so it would be contained a bit better). Simmer for 30-45 minutes, stirring occasionally, adding more broth as necessary so the lentils are just barely covered in liquid. When the lentils and potatoes are soft, gently mash the potatoes against the side of the pot with the back of the wooden spoon to make the mixture creamy. Remove the tied herbs; add the half and half and spinach. Stir to incorporate. Season with salt and pepper (season, taste, adjust, repeat). Serve each serving with a drizzle of good olive oil and a splash of red wine vinegar, per Jamie Oliver's (and my) recommendation. Notes The cooking length for the lentils (and the amount of liquid you need) will partially depend on how old your lentils are. Mine have been around for a while... so they took about 6-7 cups of broth over about 45 minutes of cooking time. Just play it by ear and do what feels right if it looks like it needs more liquid and more time.

Tonight we're having grilled hamburgers and corn tomato salad. akathy, you're an enabler/inspirer. I was fixing myself a balt for lunch, and decided to weave the bacon. It was easy, and I made myself a "fancy" lunch! sharlag, thanks for the recipe. I need to get lentils back on my rotation.

Well the not doing groceries saga continues so tonight thanks to our neighbors over abundant garden we are having hot dogs with corn and sliced tomatoes and cucumbers.
MUST get to the store tonight.

It's not always that way but this year it just happened those dates worked for both groups. I like when they're farther apart though because it breaks up the summer more. One group has been doing the lake thing for about 35 years or more and I've only ever missed one. The other group just started this a few years back but I'd hate missing this one too! I love getting together with my friends. Probably more so because I live alone.

Heading to the county fair with girlfriends after work, so dinner on a stick! With having to eat gluten free, all the best stick foods are out. I'll have an ear of Girl Scout corn, and probably a chicken satay or grilled pork chop on sticks. Curly fries probably. To finish, a hand dipped ice cream bar is a definite possibility!

I'm guessing a tuna sandwich, due to the fact that I just made a giant bowl of tuna salad. Actually, it will be lunch, too ... my mom is stopping by any minute.

After having fajitas Monday and Stuffed Peppers last night, we are about Peppered out. We are going to have the leftover stuffed peppers tonight and then toss the leftover fajitas. No more peppers!!!

I have some chicken marinating. I will grill that up and make a Caesar salad and probably a boxed cous cous mix.
Also made some Oatmeal Raisin Cookies, I found the recipe on Pinterest for copy cat subway cookies. They have the same look and texture and taste really good! The secret ingredient is coconut!

I'm making Steak Fajitas, black beans and rice tonight. akathy the chicken from last night turned out really good and it was so simple to make. I wrapped each chicken breast with 2-3 slices of bacon (I partially cooked the bacon because I read that otherwise it didn't get crispy enough) then I made a marinade of honey and dijon mustard, poured it over the chicken. I basted it with the sauce every 10-15 minutes or so. About 10 minutes before it was done I topped each breast with 2 slices of mozzarella. The chicken was very moist and flavorful. Definitely a recipe I'll be making again

I'm taking my brother and our friends out to Cattleman's tonight to celebrate birthdays. We love the place - ranch style beans, salad, soups, the best aged steaks and more. MMMMMMMM.

Tonight is salmon with rice and a green salad. Speaking of lentils....I'm just back from the store and bought some lentil hummus. It is super tasty; that's what I'm snacking on right now. I'll need to try the lentil/spinach dish soon.

I have unexpected but very welcome overnight guests, so we are having good homemade comfort food. Spaghetti Bolognese with Angel Hair Pasta, fresh Parmesan cheese and a big Garden salad with Blackberry dressing. Wishing I had garlic bread, but I hurt my foot yesterday and I have already been on it too much today, so a quick run to the store is out of the question.

My mom sent me home with some potato salad we had yesterday and I have more corn on the cob as well since my dad gave me a dozen ears to put up in the freezer.
I will have that along with some pulled pork I had left over from the other day that I tossed in the freezer.

Chicken taco meat in the crockpot. Refried beans and side salad to go with it. Some peeps have crunchy, some soft. But it's one of the few meals where no one complains.

Costco's salmon stuffed with crab dressing, fruit salad and a green salad or green beans. Yummy! And there is always enough left-over for lunch the next day!
