We had homemade chicken pot pie tonight. I used puff pastry for the crust this time and DH and my dad ate the majority of it! Guess that means no more regular pie crust on my pot pies.

Went to SAMs club today to pick up a few things...I also grabbed a Nathan's hot dog before leaving so I'll reheat that.
I was going to make manicotti but I ran out of steam..so the stuff is sitting in the fridge waiting for me to make it tomorrow.

I tutored late this evening so I stopped by Salad Express. I love this place; do any of you know it? I can get a HUGE salad with 6 toppings and it's so big I usually get at least 2-3 meals out of it. Why do salads taste better when some one else makes it?

Smokey Black Eyed Peas in my pressure cooker! I may throw it over some cooked potatoes.
I'm plant-based (vegan) so this is a typical meal for us. And despite what many people believe I've been losing weight with a starch based diet.

Nothing fancy tonight as we are facing 100+ Temps and it was to hit to be cooking!! I made some mashed potatoes & corn, then sent hubby off to by fried chicken and rolls from the deli! Viola! Dinner is served!

I had planned on making shepherds pie, but my girls asked me to make tacos instead. We're going out for dinner tomorrow, so I guess I'll make shepherds pie Thursday. I already thawed out the ground turkey.

New vegetarian recipe for us. Butter tofu and chickpeas, which is basically and non-meat version of butter chicken, and I'm still trying to figure out where the butter-part comes in, the only fat is 1 teaspoon of olive oil. We're having it with steamed rice and broccoli. We do this with chickpeas and cauliflower. I

I mix chicken and veggies with Panda Express mandarin sauce. Served over rice.
Thus is the first time in 2 years I have mixed meat with veggies. I am sad.
