If they are very fresh and not overcooked, they should not be bitter. They get bitter when they are old. Choose small, firm ones with tight leaves - preferably still on the stalk or at least freshly cut off of it. We've always had them and to most people a regular veggie during the season ( winter). There are various ways of cooking them. I like them with roasted chestnuts or bacon but I also like them steamed and tossed in a little butter. On the other hand I do not like Kale.

I absolutely love them but they have to be fresh, not frozen and I wish our growing season was longer. They are best pan fried with bacon and chestnuts in my opinion. Totally delicious.
Now kale I have a problem with. It's quite new here and I have yet to find a way to enjoy it. I've made chips and put it in soup but it doesn't really do anything for me. There is a bunch in the fridge right now which will probably die there. It comes in an assorted veg box from the local farmer, I don't specifically buy it if you're wondering why I have it when I don't care for it!

When we eat at my sisters I will always choose brussel sprouts if she's serving them. I won't buy them for home because the rest of the family won't eat them.
Kale does not do it for me and I will not force myself to eat it. There are plenty other healthy food options for me to choose from.

I love roasted ones or ones done in a skillet. They need to be slightly toasted or charred for me to like them. I don't like them slimy.
I was going to mention the ones at BJ's Brew House, too. They are really good but they have a bit too much sauce.

Brussels sprouts do seem to be the new "it" vegetable. I would never buy them, but I'll eat them if they're served to me. Kale, on the other hand, was always grown as an ornamental plant when I was growing up. I don't eat ornamental plants.

I hope so. I'm not a kale fan at all, but I like brussel sprouts, particularly when they are roasted. (Which is funny, because the first half of my life I hated them.) But really, I love to see any new recipes for different veggies. I get bored seeing recipes for the same ones all of the time.

I will eat pretty much any veggie except brussel sprouts and beets, ugh can't stand them lol and I love veggies! Brussel sprouts I hate because of the taste and beets it was one of those veggies my parents fed to me as a kid by the ton and grew to hate them from over exposure ie borscht, pickled beets, boiled beets ugh.

Brussel sprouts are probably my favorite vegetable, love them! Like already said above, IMO the absolute best way to cook them is to roast with just a bit of olive oil and salt/pepper. We never, ever have any leftovers. Too bad they stink up the house so bad. The kids can't stand the smell, but...well...too bad, lol! ![(rofl)](//storage.proboards.com/forum/images/smiley/rofl.png)

my restaurant deep fries them, then tosses them in garlic butter, and sprinkles them with romano cheese. they're pretty popular.

I never got in the kale bandwagon as I don't like the flavor, but I've been a Brussels Sprouts fan for years. I hadn't noticed their popularity increasing...
ETA: my favorite way to eat them is toss in a bowl with chopped apples and onions, drizzle balsamic over them and some garlic powder and pepper. Stir, lay out on a cookie sheet and Roast for about 20 minutes at 400 degrees. YUM!

One of my favorite vegetables along with spinach. I've always liked them even when I was little and they were horribly prepared. I like to fry them in a pan with butter and olive oil until I practically burn them. Then I add in some fresh diced garlic, salt and pepper for the last minute and eat them steaming hot...all by myself. Because no one else will eat them with me! The only vegetable I really abhor are Lima beans. And beets. And radishes. The bit in blue made me laugh! (blue emphasis is mine.) I used to say the only vegetables I hate are Lima Beans and Brussel Sprouts....but then I had fresh brussel sprouts and I can not count the number of ways that I love them.(I also love beets... but am so/so about radishes!) To the OP I think brussels and kale came into favor about the same time.

Where I'm from they are usually a side to traditional homecooking. So not trendy, but something that has been around forever and something you always get served with certain meals at your grandparents' house. I have always loved them.
But hey, for all I know they are changing their image from 'traditional' to 'hip'.

My mom has made brussel sprouts a staple in our meals since I was a kid, so I love them! I love them raw. I also like them sliced thinly, wok fried and served with sweet chilli sauce. I don't know about them being a new trend! In 51 years I've yet to see a Christmas Day without smelling them cooking :-D

Count me in as love them and don't know/care if they are a trend. Like 'em roasted, sauteed with bacon and balsamic vinegar, sauteed with pomegranate molasses. Will try them at some point sliced in a salad and in a stir fry with sweet chili sauce. That sounds really good.

My whole family LOVES them. I grew up surrounded by brussels sprouts fields, so they're not a new thing at all.
We toss in olive oil and season with salt and pepper. Roast for 20 minutes at 425°.
Yum!

It does seem like I'm seeing a ton of recipes for shredded Brussels sprouts in the last few months. My mother used to tell me they were Barbie lettuce to get me to eat them. I love them steamed, with good olive oil and garlic salt.
I wanted to like kale, and it doesn't bother me in smoothies, but otherwise I don't like it.

Love them. Roasted. In the roast cooked in juices. Fried with bacon and onions. Had them deep fried at a small farm concert this summer and they were selling them like crazy. Yum!!

I have loved them since I was a kid. My mom would saute them and I would dip them in Dijon mustard. But, my favorite way to eat them is sliced in half and then roasted with olive oil, kosher salt and pepper. My dd and I fight over the bowl. My husband only had the frozen/boiled type growing up, he's slowly figuring out he likes them if I make them. My son will eat 2-3 to be polite, but isn't a fan.
