If you post photos, can everyone see them, even people you have on "hide" so they can't see your posts? I thought I heard once that your photos are always public, no matter what your privacy settings are. Is that true?

I don't believe so. I think maybe if you tag someone in the photo and that someone is friends with the person you have blocked, they might see it that way, but it would depend on the setting.

They can't see them initially but there is nothing stopping anyone with permission to see them from saving them and posting them publicly or really anywhere they want. Once they're up you have zero control of where they travel.

If you "hide" someone - you just remove them from your newsfeed. They can still see you. If you "block" someone - you can't see them and they can't see you. When they are blocked, its like they don't exist. Their name may appear in someone's post, if they tagged them in a status or comment, but the name isn't hyperlinked to their page.
However, as already been mentioned, once you post a photo online, someone else can save and repost.
