My lunches tend to be heavier in carbs and a few hours later, I find myself VERY hungry again OR tired. I am going to try to switch to lunches which are lower in carbs. Can you tell me some lunches you enjoy that are low in carbs or lower in carbs?

Today I had a leftover burger (no bun), broccoli and a small amount of quinoa. Snacks were fruits, veggies and cheese
Other things I do frequently: egg salad (I make it with mustard & olive oil) on a whole grain tortilla green salad with a protein on it leftovers focusing heavily on the protein & veggie parts "chili" made with meat, beans and salsa (I throw them together in the morning and heat it up in the microwave...no actual cooking)

I make tuna, chicken or egg salad and just eat it with a fork. If I feel ambitious, I will make veggie sticks and use them as a dip, but usually, I just eat it as is. easy peasy!

If I am at home, I eat a salad with protein. I think it is fat more than protein that fills you up. I use an olive oil based dressing and often throw in hard boiled eggs olives and blue cheese crumble.
When I work I take lettuce wraps Today was turkey wrapped in lettuce dipped in hummus. Each bite. Other option is roast beef wrapped in lettuce dipped in flavored mayo. I like siracha or Dijon. I also do tuna or canned salmon mixed with mayo. and seasoning.

Mostly I have some combo of meat, cheese, and veggies. This week I had pepperoni slices, cojack slices, and celery with hummus. I rotate out with turkey, ham, salami, roast chicken. Any type of cheese slices. Fresh veggies are usually celery, cucumber, tomatoes, snap peas, bell peppers with or without hummus or dip.
Or salads with meat, cheese, egg, and/or nuts to make it more filling. Or sandwiches made with lettuce leaves. Or even roll the meat and cheese up with mayo and mustard inside.

Chicken or tuna salad, soup, apple slices with cheese, Greek salad, yogurt parfait, scrambled eggs, chicken sausage & apple, leftovers.

Basically what others already said... I usually take some combination of the following (not all on the same day of course, but mix and match and making sure I have enough protein):
-- hard boiled egg -- meat -- cheese -- cut up veggies -- cottage cheese -- hummus -- nuts -- yogurt -- fruit -- leftovers
I basically do a "bento" style lunch but not using a bento box and not making anything pretty or fancy. I have a bunch of the LunchBlox and use those as containers. My kids used to love taking a lunch like this and they called it their "little bits lunch". lol

I have been smashing canned pinto beans with a little cheese and salsa and spreading the mix on a lower carb tortilla. You can heat it in a microwave, if you want it warm. One can makes a few days worth.
Also, a veggie omelette cold is pretty good and easy with leftover veggies from supper the night before.

Some of my recent lunches:
- salad with red onion, cherry tomatoes, and chicken mixed with a bit of mayo, Frank's, and blue cheese - steamed yellow beans, red onion, chopped tomatoes, chicken, and blue cheese. - steamed broccoli, grated cheddar, green onion, sour cream and chicken - zucchini noodles with sauce and meatballs - raw vegetables with laughing cow cheese, peanut butter, or hummus. - Asian slaw (red cabbage, Napa cabbage, Bok Choy, onion, thinly sliced red pepper, Julienned carrots and zucchini, bean sprouts) who bakes tofu, peanut sauce, and lime.
