I have two boneless skinless chicken breasts to cook for dinner tonight and none of my usual meals sound appetizing at all. I don't have a fully stocked kitchen but I have most of the basics on hand. What's your favorite way to cook chicken?

Put the breasts in a small baking dish with 2ish high sides (i would use an 8x8 baking dish for 2 breasts), cover with a jar of salsa (1-1.5 cups) cover with foil. Bake at 350 till done (165 degrees). Usually about 30 minutes depending on the size of the breast. Shread chicken in the same dish. Mix it in with all the salsa and juices. Serve with brown or white rice and a vegetable or fruit on the side. We prefer corn. We spoon the chicken "stew" over the rice.
I am guessing on the time and have assumed your breasts are thawed, sadly I usually start with 3-4 frozen breasts so it takes much longer to cook. The dish reheats very well so you can make it early if need be.

Sautee chicken, either whole or cut into bite-size pieces, in a little olive oil. Remove from pan and add 1 T. butter, saute your fave veg (onions, garlic, shallot) or a combination thereof. Add 1/2 to 3/4 c chicken broth and reduce to desired consistency. Add juice of 1/2 a lemon, zest if you want. Remove sauce from heat and stir in 1 T. of butter. Pour sauce over chicken and serve over rice. This is one of our faves.

Pour sauce over chicken and serve over rice. This is one of our faves. That sounds really good! I may try that with the chicken breast I saved for tomorrow. Unfortunately I didn't have salsa on hand or I would have tried the salsa chicken, that sounds good too. I would up being boring and cooking the chicken on my George Foreman grill. I seasoned it and topped it with tomatoes and melted cheese. It was decent.

A few choices: Penang Chicken Curry Chicken thigh fillets marinated in sweet chili sauce, ketjap manis and lime juice (the recipe is actually for salmon but DS and DSO don't like salmon so I use chicken for them) Chicken schnitzel with creamy basil sauce I like to put mayo on top of the seasoned chicken breast then add Panko bread crumbs mixed with parmesan cheese. Bake uncovered at 350 for 30 minutes. . Always gotta use Panko!!
