Has anyone ever frozen homemade chicken salad? Did it thaw ok? My recipe has mayo, sour cream, chicken, walnuts, celery, green onion, apples, and grapes. It's all already mixed and dressed. Would love any experiences before I waste this one way or the other  TIA!

I have never tried it. I would be worried about the consistency of the veggies after being frozen and thawed.

Don't do it. Mayo and sour cream do not freeze well. When I have more than I can eat I take containers to neighbors or friends.

I always worry about freezing anything with mayo. Not sure whether that's rational or not. I would also worry about how the fresh fruit and vegetables would fare, texture-wise.
If you have no other choice, go ahead and give it a try. And please report back when you defrost.

I think the dairy products will separate and the fresh fruits/vegetables will be mushy and watery.

When did you make it?
It will last for 3 to 4 days. Go buy some pita chips and put it out for snack!

I have always heard that anything with mayo should not be frozen.

I wouldn't - the nuts, celery etc will probably be sift and yucky.

Thanks for the feedback. I actually hate mayo so this is the only thing I make with it and I don't know how it performs under other conditions.
We're at my IL's cabin and I was wondering if I could freeze it for next time we're up here rather than haul it down the mountain.

As others have mentioned, the mayo and sour cream will not freeze well and will separate and get really runny and gross once thawed. I don't think the apples or grapes will fare too well either which will add extra water to the salad once thawed. If it's more than you want to eat now, I'd check to see who else around me would take it. Last year we had a big anniversary party and DH bought way, WAY too much potato salad thinking he could just freeze it.  I told him it wouldn't work out and he didn't believe me. Needless to say, I was right. It was pretty disgusting once it thawed out!

I wouldn't do it. It won't be unsafe but the texture and safe will suffer, given your ingredients.

Green onions also don't freeze well.

Like others have said, it won't freeze well. BUT, you can freeze chicken in cubes or shreds and then make up a single serving (or two) quickly. Nuts can be frozen separately and thaw just fine. But in mayo, they will pick up too much of the liquid and get soggy. The cells of the grapes and celery will burst and make them mushy and watery when thawed. I'll use frozen celery in stock, but not much else. And frozen grapes make a cooling snack, but will be gross when thawed!

Feel free to share the recipe @missjen  I just sort of eyeball it and I made it up so I don't have an original to work with but it's approximately 2 boneless skinless chicken breasts, cooked and shredded 1/2 a hard, sweet apple, diced 1 bunch of green onions, green part only, chopped 2-3 stalks of celery, chopped 1 large handful of grapes, halved 1 large handful of walnut pieces white pepper to taste Then mixed to your desired wetness level with a mixture of 1/3-1/2 mayo (depending on your taste preference) and the rest sour cream.

Thanks Jen  I see a lot of the same ingredients that is in a Waldorf salad, and I LOVE me some Waldorf salad! So I will have to try this chickensalad recipe

LOL I had to look it up...so not what I thought Waldorf salad was!
I serve my chicken salad on a Costco croissant. Soooo yummy!
