Well, tonight it's a recipe that the dd's will hate but I don't care I got it off Facebook ... chicken breasts topped with pesto, roma tomatoes and mozzarella cheese I'll serve it over buttered egg noodles ... The dd's can fend for themselves Other than the tomatoes, that sounds really good! Would you share your recipe? Place chicken breasts on some non-stick foil (easy clean-up!) ... smear pesto on top of the chicken then add sliced roma tomatoes and some grated mozzarella cheese ... bake at 400 degrees for 40 mins We enjoyed this but would add the cheese later because it totally slid off

I made baked potatoes. I had ham, cheese, avocado, and pico de gallo on mine. It was tasty.

When I'm being lazy I fry up diced potatoes, weenies cut in pieces and onions. Sometimes I add diced green chilies. Fry it long and slow until everything is brown then scramble some eggs into it. Top with grated cheese and eat it with warm flour tortillas. Yum, and it's easy.

I'm by myself all week while my husband is on a guy's camping trip. I have NO motivation to cook anything exciting. Last night it was a quesadilla. Tonight it will probably be a bagel and cream cheese. This sounds wonderful! My dh is not a demanding, must have a formal dinner every night kind of guy (and I'm not saying yours is either), but for some reason, I always feel like I have to have a "real" dinner when he's around. My girls and I could eat bagels, pepperoni, cheese cubes, apples, and whatever else kind of hodge podge I find in the fridge and be perfectly happy with it. Sigh... That does sound good. Once in awhile I tell everyone it's a fend for themselves night, and we end up with plates of all kinds of bits and bites without making a big meal.

Last night I was going to make the Mississippi roast that was shared here. I got as far as turning on the crock pot, adding the meat and sprinkling ranch dressing on it. Then I got side tracked looking for the peppercinis and cheering on the Packers.
Needless to say, I woke up this morning to a very delicious smell! The meat was tender and flavorful just with the ranch dressing.
We had the roast with gravy, mashed potatoes and French bread.

Its been a rainy day here, so we had slow cooked tavern style beef pot roast, roasted fingerling potatoes, and green beans.

We had Chicken Caesar Salad and I have pea soup cooking for tomorrow night's supper from Sunday's leftover ham bone. That will get served with focaccia bread.

Or did I just buy salty pesto?

I also fixed these last week! It was a busy cooking week for me. I haven't cooked anything since Saturday.... Oops. I used Italian seasoned ground turkey for mine. I have used ground beef in the past but we preferred the ground turkey this time.

Or did I just buy salty pesto? Most of the pesto I've had has been more tangy than salty ... it does definitely have a tang to it if you are not expecting it
