It's my niece's birthday dinner party (22) at my sister's house tonight. My sister rarely asks me to bring anything because she loves to entertain and doesn't really approve of my kitchen shortcuts. Like, she doesn't let me make the egg salad for our tea parties because I coarsely shred the eggs instead of chopping them. Yes, she's nuts. Anyway, she did say I could make creamed spinach for tonight, as long as I make it her way and not mom's way (it's mom's recipe). YES, SHE'S NUTS. So she's making chicken Marbella and a bunch of other things, and I'm making creamed spinach. And there will be birthday cake. Mmmmmm, cake!

I'm alone so I put off making sloppy joes too. When I do make them I put the leftovers in freezer bags with enough for 2 sloppy joes. Handy to just heat up the next time the craving hits. I wondered if those bars froze well. I have a very similar carrot bar recipe and they freeze beautifully so I figure these would too. Thanks for letting me know they do. I love having baked goods in my freezer. Would you mind sharing the recipe for those carrot bars too? Sure. Here ya go. Carrot Bars4 eggs, beaten 2 cups sugar 1 cup oil 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 3 four ounce jars baby food carrots 2 cups flour 1-2 cups chopped walnuts, optional Mix well, pour into 2 greased and floured 9x13 pans. Bake at 350 degrees for 35-40 minutes. Cool. Frosting8 ounces room temperature cream cheese 4 TBSP room temperature butter 1 tsp. vanilla 4 cups powder sugar Beat until smooth. Frost cooled bars. These frosted carrot bars freeze well.

It's 82 degrees today in central Iowa, so definitely not a typical fall day, so we are going to take advantage of it and have burgers on the grill, baked beans and I'm making a batch of zucchini fries with a aioli dipping sauce.

It's a beautiful day here too . Stopped at the farmers market - tonight making: - homemade pizza with curried cauliflower, tomatoes and cilantro - roasted beets with goat cheese and arugula

I'm making Turkey Tacos to go with my homemade Salsa I made yesterday. But don't tell my family! They hate ground turkey. Let's see if I can pull it off like I did last week. Each one of them asked me if it was Turkey and I flat out lied. (I rarely lie as I am a bad liar!) They all gobbled it up so no harm, right? You don't have to lie again today. Just kinda roll your eyes and say "it's the SAME as last time so you can stop asking." Not sure what we're doing tonight. We just started the "What do you want? I dunno. What do YOU want?" conversation.

We attended our neighbors' 80th birthday party. We had pizza (Papa John's) and muffulettas (which melted in your mouth - haven't had one in years). There was also chips and all kinds of dip...the fruit tray was delicious too. Had a good cake and someone even brought him one of those big birthday cookies. Oh, he got a 60 inch tv to watch our beloved Saints get beat again! There's always next week - sure !!!! Hope everyone has a good week.

I do the same thing! I do it with Italian Beef, pulled pork, shredded mexican chicken/beef, etc. I also do it with the enchiladas I'm making tonight. Freezing things in single serving portions comes in handy the nights when I was planning dinner for just 2 people and at the last minute, I end up with 6 or more. I can pull out and thaw the amount I need and have dinner on the table quickly. Like you, I like to keep lots of desserts in my freezer. I would be so lost without my freezer!

Aldi's recently had this display of Indian food boxed dinners. So I bought the Tikki Masala and the Vindaloo along with a box mix for Roti (a fried bread). For boxed foods, they all turned out really well. The sauces were creamy and a good consistency. We liked the Tikki Masala (I made it with chicken) but it lacked the richness of the version at our favorite Indian restaurant. We didn't care as much for the Vindaloo (made with pork) as it was so spicy hot it took away from the overall flavor. The rice and the Roti came out perfectly. It was an interesting experiment. But of course, being Aldi's, I'll never see these mixes there again so we won't be repeating it. Lol.

But I was worried he would catch it this time and then figure out it was indeed turkey last time. But again, they all gobbled it up. Wonder how long I can get away with this...

I made potstickers and a side salad. I picked the potstickers up at Walmart in the freezer section and I wasn't too sure about then but wow...they are great.

Its thanksgiving day here! We had italian turkey wedding soup- so Delish! Turkey, spiral ham, mashed potatoes, veggies, gravy, salad and pie three different kinds ! It was a great dinner- mostly because i didn't cook a lick of it!!! LOL

We have Canadian family in town for their Thanksgivng break so headed up to LA for the day. Somehow we didn't get lunch until after 3, so I'm counting that as dinner. We ate at one of our favorite spots in West Hollywood, Fresh Corn Grill, which means everyone had grilled corn .

We had Irish stew that slow cooked in the crockpot all day. I served it with crusty bread rolls with Kerrygold garlic and herb butter.
