Cute dress!! I made Meatball subs and the meatballs were full of flavor. We had Mediterranean tortellini salad with it. I love these kinds of salads! We did a Chinese night and had Chow mein noodles made from ramen noodles & I used bagged coleslaw instead of chopping cabbage & carrots. It was super easy & tasty. We had Fried rice with it & store bought egg rolls. The fried rice was easy & you could throw any veggies in you want. I made Lasagna fritta a couple weeks ago but made so much I froze a bunch. We had these as leftovers and the still kicked butt re-heated.

The only thing I made from my Pinterest boards this week was one of our fav salads: Good For You Greek SaladI add quinoa to it to make it a meal and use white wine vinegar instead of lemon juice because I prefer it

I felt guilty that I haven't been making anything so I whipped out two batches of this pesto using some of the ton of basil we grew this summer (which started from a $2.99 plant at Trader Joe's). It was good on a cracker. Tomorrow night I'll put it on pasta. Then I put a chicken in the oven using this very simple Thomas Keller recipe and I'll come back and let you know how it turned out. UPDATE: My husband told me not to ever make a different roast chicken recipe again. It was super simple and EXCELLENT. (I do plan to try the Daniel Boulud recipe because the very best chicken that I've ever had was at his restaurant, but it requires about two days of prep so it wasn't in the cards for today.)
My husband also suggested that I look up Thomas Keller's turkey recipe for this Thanksgiving, so that's on my list.

I've checked in on these threads a few times but haven't posted yet. This is a great way to get me to actually TRY some of the hundreds of ideas I've pinned! I made a double batch of these Cream Cheese Sausage Balls for yesterday's tailgate before the PSU football game. They were super easy to make. I served them with a honey mustard dip on the side, and so many commented on how good they were.

I made baked ziti last night and it was a big hit. Made a ton so we have leftovers for lunches for the week.
