Hi!~ I promised a friend I would make her a Broccoli Chicken Pasta Casserole for tomorrow's dinner and I'm hoping someone has a tried and true recipe. I don't want to use and canned "cream of" soups, prefer to make the sauce myself from scratch. Having trouble choosing a recipe online.., Thanks!

This might not be exactly what you are looking for, but I make this One Pot Orzo and Brocolli dish and I add chicken to it. My whole family loves it. Recipe

I just had a broccoli casserole at my mom's that she swears that she has been making my whole life but I think she lies.  I made a copy of the recipe because I think I could easily add chicken and it would still be wonderful- but there is a can of cream of mushroom soup. You can make the equivalent for any recipe though (I've done it, just not for this recipe,) so I probably wouldn't discount a recipe for that reason. It is basically a bechamel sauce with spices-and in a casserole you may need to add a bit more liquid because the bechamel can sometimes dry out the other ingredients. Although, with the casserole I had on Sunday I was REALLY surprised that there was cream of mushroom soup in there. I couldn't taste it and my mom is more likely to make her own sauce than open a can so when I raised my eyebrow at her she laughed at me and said the recipe was from the 70's so sue her.  If you want the recipe let me know.

I make a gluten free one for dd with sour cream and chicken stock. I admit I miss the taste of the canned stuff, but I like knowing exactly what's in my food.

I'm happy to share! Like I mentioned, this is a strictly broccoli casserole, but could easily have chicken added. There is no pasta/rice involved, whatever starch is desired would be served on the side.
Broccoli Casserole courtesy of my Mom and the 1970's
1 bag of broccoli florets (the recipe originally calls for a box of frozen broccoli florets, but fresher is better) *regardless of which you choose, cut the stems off and steam until just tender 1 can cream of mushroom soup 1/4 cup sour cream (or mayo-which I refuse to use-I hate the stuff) 2 eggs slightly beaten (and this is why it is okay to substitute sour cream or probably even yogurt) 1 tsp. lemon juice 1 tsp. worcestershire sauce 1 cup shredded cheddar cheese
breadcrumbs/butter for topping
Mix all the liquid type ingredients (cream of mushroom soup, sour cream, eggs, lemon juice and worcestershire sauce.)
Layer steamed broccoli in the bottom of a 9x13 pan, cover with liquid ingredients, sprinkle cheddar cheese, cover with bread crumbs and dot with butter. Bake. I forgot to write that part down, but my guess would be 375 for at least 30-45 minutes.
If I was going to add chicken, I would add already cooked and shredded to the broccoli layer. Probably two cups?

This is very similar to what I was looking for! Thank you! ?? One of the reviewers asks about so much liquid for such a small amount of rice. I'm guessing it is still pretty liquidy once the rice is cooked, to be a sauce. Is that right?
