Cheesy chicken broccoli and rice
1-2 tbs olive oil (I never measure)
about 2 cups diced cooked chicken
1 cup long grain rice (not instant or converted)
1-2 cloves garlic, minced
3 cups chicken broth
1 tbs minced dried onion
1 tsp salt
2-3 cups broccoli florets
2 cups shredded cheddar cheese
Heat oil at oven 350 or stovetop high. Heat chicken in oil (I buy frozen diced chicken so I just heat it until it's thawed most of the way). Add rice and minced garlic and heat for 30 seconds or so. Garlic burns quickly-don't let it burn. Add chicken broth, onion, and salt. Place lid on and bring to a boil. Let it boil on stovetop medium for about 12 minutes (see note below). If you have the 4 in 1 I think you can just put it on high until it's boiling good and then turn it to stovetop low to simmer. Put broccoli on top. Replace lid and cook for another 8 minutes. I use medium so if you have the 4 in 1, you might use the steam setting for this part. Stir in cheese.
note: we like our broccoli well cooked so we cook for 8 minutes before adding the broccoli for another 12.
