Just do a light scrub. Never peel.

I put never, but on the very rare occasion I actually do. I can't remember the last time I did.

If they're bigger, older ones I do, otherwise no, no need. The skin is a good source of fibre etc. Exactly the same as gar

OK I need to change my answer to the poll. I used carrots tonight in a salad and I didn't peel them. First time ever. Go me!

I answered yes under the assumption that you are talking about full sized carrots because I buy my baby carrots already peeled. But if you are including baby carrots then I would have to revise my vote to 'depends' because I don't actually do the peeling.
But if you are asking if all my carrots are peeled the answer is yes.

Yes, always and I never use "baby" carrots. They seem slimy to me and have a funky smell. It is so good to hear someone else say that... because I feel the same way. And they aren't babies... they are just big carrots ground down to the "baby" size. But they are so weird.

I peel because that is what my grandma and my mom did. Cooked carrots aren't my favorite, so I've never tried to change it up.

They don't appeal to me. I much prefer real baby carrots. One of the best things to get at the farmers' market early in the season. Particularly baby purple carrots.

This question is interesting to me! When I was growing up, my mom never peeled carrots. She felt they retain their vitamins with skin on. She would cut big chunks (like 3-4" at least) and put them into stew. I really disliked them like that.
One of my rites of passage upon adulthood, in addition to no longer being forced to eat calves liver, was in no longer eating cooked carrots with skin. I now loved cooked carrots - but they have to be peeled, lightly steamed, salted and buttered.

I believe (but could be wrong!) that there is a higher concentration of vitamins just under the skin (in all veg I guess) so the more/deeper you peel the more vitamins you lose.

But at the bigger stores they offer both.

Cooked or raw, I don't peel them. I wash them well and chop. I convince myself the skin has a ton of goodness in it that I don't want to throw away. In reality, I hate peeling
