DD requested eggs benedict for her birthday dinner this year.  I've never actually made eggs benedict before, so I'd like some easy accompaniments. Something that I don't need to stand over/prepare at the last minute because I think I'm going to be going crazy trying to make hollandaise and making poached eggs for 12-13 people. Update 7/29: We had DD's 13th birthday today! Dinner turned out awesome! I made hollandaise (the traditional way, forgot about looking into the blender method until I came back to this thread) and it was great. I steamed asparagus for the eggs benedict... she's a huge Sherlock fan so I made cucumberbatch salad to go with the eggs benedict.  (ie, cucumber salad). I also made roasted potatoes with new baby potatoes -- parboiled on the stove and then sent them out to the BBQ with my dad to watch over them. Was a great dinner! |

I'd serve a green salad. If it were breakfast, I'd probably serve fruit/fruit salad but for brinner, I like to make it a little more dinner-y with some vegetables.

I'd say a hash brown or something of the like. Asparagus comes to mind as well, but that season is long gone.

She did request asparagus. And maybe spinach. And potatoes. I usually make my own homefries to go with egg dinners but I don't want to have to deal with cooking them while poaching so many eggs and worrying about sauce. We're actually having very nice asparagus for dinner tonight. |

Maybe fruit salad? I never had eggs benedict but I have seen pics. Now I'm curious what it taste like..

Eggs benedict is one of my favourites! My preferred sides would be asparagus, spinach or hashbrowns … what a sweet mom for attempting a never-made-before dish for her birthday!

First thing I thought of was fruit. If you feel like you need some kind of potato, I wonder if there would be a scalloped potato or something you could do in the crockpot?

Hash browns would require you to stand there. I would roast some small new potatoes seasoned to taste. I would also serve a spinach salad with baby tomatoes and cucumber with a light vinager based dressing as the hollandais sause is going to be heavy. I'd make extra sause because I love putting it on my hashbrounds/ potatoes!

Yup, which is why I don't want to make them. I hadn't considered fruit salad. She wants cheesecake and fruit for dessert, so not sure if we need that much fruit in one meal. Hmm. I don't have a crock pot. Maybe we can do some potatoes on the barbecue so I don't have to make the kitchen any hotter. |

I make eggs benedict for my husband a few times a year for brunch & I serve it with fruit, roasted potato wedges & steamed asparagus. The last time I made it I made my own hollandaise sauce in the blender - it was so easy & delicious!

What about the "crash hot potatoes" from Pioneer Woman as an alternative to hash browns. You can do the preparations in advance to get then on the cookie sheets, then roast while you're doing the eggs Benedict.
And just a slight hijack --- a few weeks ago, I was in Virginia Beach and had soft shell crab eggs Benedict at a little breakfast place called Citrus that had been featured on Diners, Drive-ins, and Dives. Oh my heavens... they were wonderful!

If I don't want to turn the oven on, I cut and season potatoes, place on sprayed foil, wrap and toss on the grill.

I'm assuming you're not going to include the Canadian bacon (well, that's what we call it ... what do you call it?) in the eggs benedict ... you know you can use spinach instead? Then it's called eggs florentine instead. Way good. If you're serving fruit with dessert, then just potatoes with eggs florentine works great. Everyone here loves the crash hot potatoes. |

I'd also vote for potatoes of some sort. Either the crash hot one, of chopped up, seasoned and put on the grill or in the oven. Don't you live very close to your mom? Maybe she can be in charge of making the potatoes and bringing them over.

Can you guys share the blender Hollandaise sauce recipe please? I love eggs Benedict as long I can have ," real bacon" instead of ham. We love roasted asparagus, but never had it with hollandaise!
