Awww, akathy... I hope you are home and feeling better soon!
We had a Home Chef recipe turn into a giant flop tonight. It was a deep dish recipe that smelled SO good, but the sausage (which the recipe did not call to brown first) never cooked through... Even after nearly an hour in the oven. So the crust was over done and the sausage was still raw. I was so bummed!
DH is out picking up pizza right now.

We are still working our way through the halibut DH caught in the summer. He grilled the fish & vegetables and I oven roasted potatoes.

Kathy, I would almost have what you are having because it is easier than deciding what to cook for my extraordinarily picky MIL, who "claims" to be lactose intolerant, hates pork, is sick of chicken, thinks ground turkey is devil's food, is diabetic but eats whatever she wants and then gripes because her blood sugar is out of whack and blames the doc for the wrong meds, blah-blah-blah! I think I am going with homemade vegetable soup minus the meat (I have a beef allergy and that is THE only meat she wants), salad and a crust bread with "oleo" (her type of butter). I extremely like that side of dilaudid! The only issue is being sick with it. Sorry you are feeling so bad.! I wonder if faking illness will get her to go home early? ?? I would buy her cases of chunky sirloin burger

The pork loin that has been in the frig for a week was still good. So I rubbed with some packet dry rub. It was delicious.
And I made cheese tortellini with German potato salad dressing. 2 bags of tortellini. And it is almost gone , eaten by the son who hates vinager.

Oh Kathy, I am sorry! My son had almost that exact meal last weekend, he had 3 bags of fluid with a side of Rocephin. Hope you feel better tomorrow. I feel bad for everyone who has to deal with a chronic illness, it is no fun!
So far for dinner I have had 1/2 a kit kat! I know you are all super jealous!

akathy Hope you're feeling better soon! Dinner was chicken tacos because we had soccer and my MIL was here. I wanted something quick and easy to MIL could be on her merry way quickly. I definitely need to send you the chicken vegetable soup recipe, ready in about an hour, so easy and I haven't heard anything except a snore out out my MIL for the past hour and a half! So glad she leaves for home in the morning. Peace shall reign over the grocery basket after that!

Awww akathy that doesn't sound like fun. Hope they make you better at the ER. I had cornflakes for dinner. The hubs and I caught the flu last weekend on a plane flight and we are still sick...in bed sick. I have no veggies or eggs in the house and today my microwave quit and I've forgotten how to warm stuff on the stove, ha.

We just got back from a week at Disney and I have no food in the house, well, I don't count Frozen Pizza, nobody wanted it. So we had Chinese takeout. It was yummy, but I have to get it together for real food tomorrow!

DSO recently bought 2 cookbooks, one is Tex Mex and the other is Texas BBQ, and he wanted to cook something from one of those books. He ended up cooking burgers with jalapeno cheese - we even took a drive to Costco to get some real American ORANGE cheese!! (Our cheddar is pale yellow but DSO wanted orange stuff to make it look "authentic"!!)

Well, MIL wasn't quite as difficult as I expected. I added shredded rotisserie chicken to the vegetable soup. And used the rest to make chicken salad for sandwiches using croissants. Also had make it yourself side salads. She swore it was the best soup ever and didn't know that chicken could be used in place of beef in vegetable soup and was actually BETTER! Hallelujah! Akathy, did you slip her some of your dilaudid by any chance? she claims she has eaten so much she is going to bed early and will be reading until she falls asleep! I need to patent this soup! LOL Now I can watch Walking Dead without fear of giving her a heart attack! Anyone want this recipe, guaranteed to knock you inlaws into the twilight zone! please send me a truck full for my mil she eat about 5 foods sweet and sour chicken White rice pick of steamed or tempura veggies
