Happy thoughts, akathy! I was starting to feel kind of desperate about this, but then I remembered I have half a pound of ground turkey in the freezer. He loves turkey cheeseburgers, and they are fast and easy which is what I need on a Tae Kwon Do night. So turkey cheeseburgers it is. Maybe with crash hot potatoes if I can get them organized?

Hopefully fish tacos for Taco Tuesday, but if everyone is still sick, i might name quesadillas and soup instead of our weekly trip to Rubios.

I'm on the return trip home from Virginia. I've got a 12 hour ride to figure it out  Kidding! No cooking for me after a long trip. Dh and I will be stopping for a bite to eat and a glass of wine or beer on our way back to the Cape.

Thanks to our CSA I have one of those funky looking Romanesco cauliflower in the fridge, I'm going to use that along with purple carrots and chickpeas to make a curry. We'll have it over steamed rice. Last night the fish I made was a huge hit. Dh never compliments me on cooking, but last night he had seconds and announced "this is really good....make it again". The recipe called for tilapia, but it would be great with pretty much any white fish, or shrimp, or chicken. We're having leftovers from the other night: pork roast, carrots, and potatoes, cauliflower gratin, butternut squash, applesauce, rolls, and an assortment of cookies for dessert. calgal08, thanks for sharing. That looks really good! I refuse to allow fish, other than cans of tuna, in my house, but chicken would be a great substitute.

I'm making chicken florentine pasta. I'm combining a couple of different recipes so it will be interesting to see how it turns out.
I'll cut up a salad and make some garlic bread to go with it.

My cook, uh, brother, is house and cat sitting this week, so I have left overs. Lots and lots of left overs. I could have any combo of the following:
chili tacos chicken strips breakfast sandwiches chicken soup pork stew
All are in my fridge and/or freezer.

I am going to grill some lemon chicken (even though it's 25 degrees!) and bake some potatoes and make a Caesar salad.
If I make it to the store today I am going to pick up some zucchini, my oldest son called and asked me to make him some zucchini muffins. I love that even though he doesn't live at home anymore he still likes his mamas cooking!

I'm still in a cooking funk today but I'm going to force myself to make one of dh's favs: beef stew with baking powder biscuits  Of course ... yes, we all know this is coming ... the dd's won't eat it so they are fending for themselves tonight

This is clean out the fridge day. DH had a little leftover soup (from last week) and leftover black eyed peas so he combined and added diced tomatoes, corn and a can of potatoes (he picked up at W/M just for times like this). I made a Caesar salad because the Romaine had almost been in the fridge too long. I had Pasta with Ricotta and spinach (made by Smart Ones - not bad).

It is overcast, breezy, and cool in my area of Southern California.
So I am serving homemade gluten free blueberry muffins, homemade chicken tortilla soup, and a garden salad.
Mmmm. Already cooked the chicken and muffins just came out of the oven. After I get ds from school I am going to prep the veggies and salad and then allI have to do is make the soup.

I still haven't picked up pesto..I was supposed to on my lunch break and I didn't...I got distracted shopping for a birthday gift for my DS' godmothers daughter. (Does that make them god cousins??).
So, I'll pull something from the freezer. I'll likely pick the rest of the pot stickers from the freezer and a green salad.
Tomorrow will be caprese chicken if it kills me!
