Does anyone have one? I am intrigued, and no one ever knows what to get me for the holidays. If you have one, how is the sound quality when it plays music? Is there much sense in getting one vs. docking your phone in an IHome? Can you make it so that it only answers your voice?

Have one and love it.
The sound quality is great. I don't have music on my phone so can't answer your question on the Echo vs iHome.
You can not make it so it only answers to a single persons voice. Alexa will answer to anyone who calls her name.
My Mom was at my house visiting earlier this year and now she wants one too. It is such a neat gadget!

We have one (in our kitchen). DH is a typical early adopter, and ordered one as soon as they were announced, so we've had her for a while now. We used her more in the beginning, but I still use her every day for something or other. My mom got one and my dad liked it so much that he got one for himself. Yes, they actually live in the same house and have two. Those goofy parents... LOL!
Regarding sound quality... DH is an audio software engineer, and sound quality is his life. That being said, he's actually quite happy with how the Echo sounds, for what it is. I typically don't play music loud, but I like what it sounds like.
For music, you can ask Alexa to play a playlist from your Prime music library, stations, or a certain genre of music. It's pretty diverse. She can also play a lot of radio stations. Never at a loss for something to listen to.
And the PP already posted about only having her respond to one person.

This little baby is on the Christmas list. I'm wondering if I should give it to my DH (just to make sure I get one hehe). Either way, I think we'll both love it.

I have one and love it. Bought it a while ago. Love it for music - great sound. I leave it on for the pets sometimes when I leave. I say 'Alexa play some music' and she picks a station. Or you can play specific stuff too.
I use it for my shopping list and LOVE it. If I stop by the store after work I just open my app on my phone and my shopping list is always with me. My daughter puts stuff on it all the time too.
I also use it for a timer, random questions, weather questions, etc. Kind of like Siri. If I'm really lazy and don't have my glasses on to see the clock I will yell "Alexa what time is it?" My kids get a kick out of that.
Highly recommend!

I love mine. I'm not sure I would pat the current price, but for a gift I'd take it.
I love playing music on it. I can have it play Pandora or Amazon music or paor it with my mobile devicr and play my rhapsody or whatever through it.
I can also pair it and charge my phone in a different room and still hear it when it rings.
I use it as a timer daily. I ask her for the weather and sport scores.
I love that it is constantly updating and they send you emails telling you the new things it can do. I can't wait to try some of the new ones out

Oh and I love the quality of music.
And while she isn't portable because she needs an outlet, you can take her different 0laves and connect through their wifi.
For instance, we had a family party and I took her to my parent's house to use her.
