I have an old friend and two other friends coming for dinner - it is hot here today and i am stumped on what to serve . what do you like to eat when its hot out?
Originally i was going to have a lasagna, caesar salad and garlic bread- but not sure i want to put the oven on I personally am not a burger fan so that's why i am not going that route
any ideas

I would grill something - chicken, steaks, brats, and have cold salads.

my go to meal for an occasion like that is Chicken Caesar salad. Here is how we do it: Lots of romaine, Parmesan cheese, Marie's Caesar dressing mix, I use a good roast chicken from the store and I add some cooked Penne Pasta. It is really good. I know it sounds weird to add the pasta but it is REALLY good. I would serve that with maybe some garlic bread and fresh fruit. I get asked to bring this dish to EVERY pot luck i go to. The secret is in the dressing. Marie's is seriously the best!!!

Mediterranean mixed grill: marinated grilled chicken, tons of grilled veggies, fresh pita, olives, tzaziki, hummus. Fresh fruit and yogurt with honey and slivered almonds for dessert. Very versatile in case of an unexpected vegetarian or gluten-free guest - people can assemble the meal however they would like.

We probably do some variation on that meal once a week at my house in the summer and I eat off the leftovers for lunches for several days after. A chimichurri sauce (easy to make in the blender; just google) really adds a nice pop of flavor .

Merge left that's what i would do-- if i hadn't had that yesterday for dinner! LOL It is one of our go to meals nice and easy and relish!
off to the sore for inspiration- but am leaning toward grilled chicken and salad

We would do a grilled mix grill...some steak, some salmon and some chicken and an assortment of cold salads (Ceasar style potato, green salad and green bean with feta salad.)

Just popped in to say I made Katiez4kids' Chicken Caesar Salad tonight for dinner and it was fabulous! I will definitely make it again.

I was going to suggest Oriental chicken salad like Applebees (except I grill or George Forman instead of fry the chicken) with a great crusty bread or a great Chicken Cesar. Or even grilled steak salad.
