Thank you for the recipes, they sound delicious. I haven't used my slow cooker in a while and it's just sat there looking at me - this has encouraged me to use it again!

So sweet of you to do that for them. I'd love the eggplant recipe if you have time. It's pretty simple. After I slice the eggplant I sprinkle with salt and let sit on paper towels for about 15 minutes. After that coat with cornstarch, dip in a beaten egg then into seasoned bread crumbs with grated Parmesan added. Let sit again on paper towels for a few minutes to set. Fry in hot oil. Using either your favorite jar sauce or homemade put a little in the bottom of a baking dish, layer the eggplant, add more sauce then a layer of shredded mozzarella and a little more Parmesan. Bake until cheese melts.
