Just got back from delivering - Edited to add a few recipes

22 freezer/crockpot meals to my parents. I shopped, chopped, pre-cooked, bagged, labeled, and cleaned the kitchen.
DH just asked what's for dinner and I told him call Dominos, I'm beat!

What I made:
eggplant parmesan (2)
meatloaf (2 small ones)
meatballs (enough for 3 meals)
fish
ham
beef stew (2)
3 other beef dishes
4 chicken dishes
3 pork chop dishes
Pinterest was my friend along with my Taste of Home Slow Cooker cookbook. For freezing I like to brown all the meat first and I leave out potatoes. I use 1 qt freezer bags and write the name of recipe, how long to cook and if they need to add anything like the potatoes or a thickening agent toward the end. My mom has dementia so cooking is a problem for her now. Even though I cut most of the recipes in half it still makes enough that they have leftovers for lunch the next day. Doing this means I know they aren't eating soup and sandwichs every night.
I spent a total of $86 for all the ingredients so just under $4 a meal for 2 people.

BBQ Chicken and Veggies
· 2 green peppers, chopped
· 1 red pepper, chopped
· 1 zucchini, chopped
· 3 onions chopped
· 6 red potatoes, chopped
· 4 garlic cloves, chopped
· 4 chicken breasts
· 1 15 oz. can of tomato sauce
· 1 tbsp. brown sugar
· 1 bottle of BBQ sauce
Split ingredients into two bags (yay for two meals!)
Cook in slow cooker on high for 4 hours or low for 8 hours

Smothered Round Steak
1/2 cup flour
1 tsp salt
1/4 tsp pepper
1 1/2 lbs top round steak cut in 1 1/2" strips
1 large onion sliced
1 large green pepper sliced
1 can diced tomatoes
1/2 lb fresh mushroms sliced
3 tbsp soy sauce
2 tbsp molasses
Mix flour, salt, pepper and coat meat. Transfer to slow cooker and add remaining ingredients. Cook on low for 7 to 8 hrs or unitl meat is tender. Serve over noodles
Chicken with Beans and Potatoes
2 lbs chicken breast cut in 1" cubes
1/2 tsp lemom pepper seasoning
1 tbsp canola oil
1 lb fresh green beans
1 lb small red potatoes, quartered
1/2 lb fresh mushrooms sliced
1/2 cup thinly sliced onion
2 cans chicken broth
2 tbsp onion soup mix
2 tsp worcestershire sauce
1 tsp grated lemom peel (optional)
1/2 tsp each salt and pepper
1/2 tsp garlic powder
Sprinkle chicken with lemom pepper and lightly brown in skillet. Layer green beans, potatoes, mushrooms and onion in slow cooker. Mix remaining ingredients, pour over veggies and top with chicken. Cook on low for 4-5 hours.
