Not thanksgiving leftovers, sadly. Last night I made chicken piccata. I love it and think it's lovely. My children hate it. I have a ton leftover and I don't want to have to just throw it out. Got any great ideas? (Bonus points if you can help me mostly hide the lemon because that's what my kids didn't like.)

Freeze into individual portions for lunches (or dinners sans kids.) Cut into smaller pieces and add to a creamy garlic pasta dish. That's all I've got.

Get rid of the sauce, take said chicken and dice and place it into a salad (lemon goes well in salad) with a citrus type dressing or honey mustard. Or make Panini's with cheese, arugula and apples.

I'd chopped the chicken and make an orange sticky sauce so it's more like sweet & sour chicken than lemon piccata. Then I'd serve it with rice.
