Today is my youngest Grandson's 7th birthday!! He has a huge sweet tooth so if I were in charge he and I'd split his Mom's homemade chocolate layer cake with lots of vanilla bean ice cream and green sprinkles on top What are you doing for dinner tonight?

DH is having some dental work done today so dinner will be some easy-to-chew soup of some kind. He'll probably choose his favorite baked potato with pumpernickel bread on the side. Perfect for this dreary, rainy and chilly day.

Probably some sort of pasta dish with sliced peppers, and turkey. I still have some leftovers to use up, and getting them into pasta will be a great disguise!

Another not very exciting dinner for us. Salsa verde chicken bake with steamed rice. In the fridge I've got 1 lonely yellow squash, some leeks and a few carrots. Going to have to get creative to make something with the veggies.

It ended up being only dh and me home for dinner last night so I cooked up some frozen mozzarella stuffed chicken breasts (that the dd's don't like - big surprise) ... we had them with leftover Mexican quinoa salad and some noodles ... Tonight I'll cook the pork cutlets I planned for yesterday ... we'll have them with creamy noodles and some fresh cut veggies

I started with the black beans and rice thing, but decided I would mix some corn and onions in the black beans and serve with the rice and tortilla shells and have burritos. This is a meal both the boy and I like and he is one who (for the most part) eats healthy and likes it when I serve meatless meals. Don't get me wrong, he would trade me for a side of bacon, but for the most part, he is like I am and prefers to eat meals without meat.

Chicken Tacos. DS starts baseball conditioning tonight, so I have to make things that can be reheated easily 3 days a week from now til the first week in March! To add to it, I also have the Senior Parent Meeting tonight at 7, so I probably wont even see ds til after that!

Dh says we're having boneless smoked picnic shoulder with boiled potatoes and carrots and steamed broccoli. Apparently he chose not to venture out to the store for cabbage and turnips.

DS has German tutoring tonight, so we usually pick up fast food after I pick him up. I like that we get dinner out of the way early and I have nothing major to do when we get home. I can relax with my wine and watch Project Runway Junior!

A break in the rain inspired me to thaw a steak. We're having grilled steak, tabouleh, and leftover veggies. I made pita chips to serve with hummus for pre-grilling wine time.

I don't know.
I think I am eating turkey again. I am seriously not tired of it. But it is on its last legs for sure. LOL.

sorry its pretty common around here. I drool over what others list that they are having but I don't have time or energy, or funding, and ds is super picky and after working and with homework to do,and with fibro aches and pains I'm just exhausted.

Some of the leftover ham and I'll make a bit of mashed potatoes and corn to go with it. Not too much effort and it's a take it or leave night-that kind of mood! LOL I promised them something better tomorrow night but tonight just gotta go with it!
