My husband and I recently got married and received a nice Macy's card as a gift. We have blended two households full of lots of stuff together but one thing we've lacked between the two of us is a quality knife set. I cook a lot and we both spend a lot of time preparing meats and vegetables. I need a set that will hold up really well and maintain a nice sharp edge for as long as possible. I've looked at the Macy's website and see several brands ... I've had a little JA Henckles experience but the last ones I bought dulled VERY quickly. I'd really like the full set with the butcher block for storage. Any input would be GREATLY appreciated :-)
What say the Refupeas?
Edited to add that I'd like to stay under $200 or under in price :-)

This won't help you but we have had the best luck with Cutco Knives.

I've got a few Cutco knives and I love them (my college boyfriend sold them to me ... and that was 20 years ago)! They've been perfect for years ... If I don't get good feedback on what Macy's can offer I'll just save up for the Cutco.

Have you tried sharpening the JA Henckles?
I took a really good knife class at Sur La Table, and while he did say there certainly are better and worse knives out there, he said the #1 thing is how often you hone and sharpen it. He said you should basically be honing it every other time you use it (the metal rod that comes with a set) and sharpening every couple months. He was a big fan of the "old" style blocks and crap to sharpen knives, but that's way too much work for me and we got an electric sharpener for our wedding (he said those are fine, just not as good - he was clearly a purist).
I started sharpening my knives about every other month, right before I do my big "monthly cook day," and it is unbelievable the difference it makes! And I have a pretty wide range of quality of knives.
So whatever you get, I'd get an electric knife sharpener as well too. It's a little noisy but very fast and easy.

I hadn't looked at it from that perspective! I honestly haven't tried sharpening the JA Henckles that I recently bought. I was kind of down on them because they dulled within a few uses. I am seeing from my research that the JA Henckles actually made in German are superior to the others. I think a nice mid range set with the sharpener might be just the ticket. Thank you!
And of course any other feedback is appreciated!

We have a variety of knives JA Henckle, Cutco and Pampered Chef we have used through the years. Best advice is to wash by hand, dry and put away. The dishwasher is not good for knives or cookware for that matter.

I have a set of Henckle knives that I got at the outlets, at least 10 years ago, they're still in great shape. That said, I also have a number of specialty knives that I use that probably help keep my Henckle knives in good shape, all from Rada Cutlery, like their paring knives, tomato, chef's knife, etc.

We got a great set of Wusthof knives when we got married. They are amazing! My husband keeps them sharp for us and oils them regularly.

The dishwasher is not good for knives or cookware for that matter. Admittedly ours end up in the dishwasher on a semi-regular basis. That will have to change :-)

I was going to ask about the Wusthof :-) Good feedback thank you! I have Wusthof, and like the Henckles, they need regular sharpening and honing. When sharp, they are very sharp, but they dull quickly. We bought a good electric sharpener.

Exhubby and I got Henkel's and they were awesome. We had people wanting to buy us knives...it was weird, but I would say at least 3 couples who were invited to the wedding wanted to buy knives or wanted to contribute to the purchase of knives. Another couple bought us Henkel's steak knives. They were great, too! We had every single knife in that series apart from the clever. They were great.
My mom and dad still have the ones they had 20 years ago. I just bought them each a paring knife for Christmas. His and her's. I also got them a set of steak knives. Those were the hit presents of the year. They had no idea that I had been listening to the complaining and moaning we didn't have decent paring knives. I heard it and as soon as the Bay had a one day special they got ordered that day!
I am partial to this brand and it is all I know.

I'm quickly seeing that I've been looking at my problem from the wrong direction! A nice JA Henckles or Wusthof set that is sharpened regularly and hand washed and dried immediately will keep me "knife happy" :-)
You guys are awesome ;-)

I've had my Henckle knives for 20 years and love them. But I do take them every few years and have them professionally sharpened.

I agree that Henckel and Wusthof are the way to go. I have a mix of the 2 brands, some 30 years old. Most are stored in a knife block, while the larger ones are stored in this Wusthof drawer knife block. Take good care of them and you'll have them forever! AN and GamGam - What brand sharpener do you recommend? Mine need sharpening now and it is such a pain to drag them down to the store to them sharpened. Was thinking I'd just buy a sharpener.

We bought the ChefChoice Diamond Hone Sharpener 270. The angle it sharpens is for European and American made knives. Since you have European knives, it should work well.
