Tonight I'm thinking about making the garlic chicken pepper, brown rice sautee that I didn't make last night, because we all had late appointments and ended up w/Chipotle.

I'm in the same approximate boat. It was just me last night and I ended up eating leftovers. So tonight I will try again to make broccoli cheese (and chicken) soup. And probably refrigerator biscuits because I have some in there that aren't getting any younger. akathy, nice to "see" you looking a bit more chipper.

We need something that's quick and easy to eat, so we're having tuna sandwiches in whole wheat bakery buns, apple slices, and cucumber, onion, and tomato salad. No one will be happy because it's not a "dinner" but, oh well. It fits the criteria of quick and easy to eat. <shrug> It's good to see you, akathy! newlywoods03, I'm sorry your little guys (and you) can't seem to get and remain cootie-free for any length of time. Children are sometimes cootie/germ magnets when they're young. I know that doesn't make you feel any better now, but it will get better.

My DH requested a favorite from his bachelor days...Hamburger Helper Stroganoff. I find it disgusting but he likes it. I really shouldn't be so judgy, I sometimes crave Cheese its which are also kinda low on the food chain. While he happily consumes his Hamburger Helper, I'll be eating lefovers.

We're having a new recipe. I admit I usually detest any crockpot meal, but this one (which I pre-made last night incase it wasn't good and I would have time to re-think the menu) is a winner. Moroccan Chicken. Instead of all the ingredients sitting a bunch of liquid of some sort (which is the part I hate about crockpots), this is 100% dry. Not an ounce of liquid is poured over the chicken. You basically transform the crockpot into a tangine. Here's the recipe if anyone is interested: www.simplyrecipes.com/recipes/slow_cooker_moroccan_chicken/I used boneless skinless breast instead of chicken thighs, which although I expected would dry out slightly, didn't happen. I cooked for 2.5 hours on high. Anyway....that's what we're having over steamed rice and shredded sautéed brussel sprouts.

Amazingly, I actually made dinner like I planned to last night after a crazy day. Go figure. Tonight, I have some kind of thinly cut steak. I am not exactly sure what I will do with it, but now that I think of it, fajitas sounds really, really good, and we haven't had them in a long time. Fajitas it is! I think I might even have some refried beans handy. However, I sadly have no salsa, so I will likely need to run to the store. Lisa

Today is crazy driving children to activities night. So I made a lamb and dumpling casserole that sat in the slow cooker. Served it with carrots and brussels. Dessert was help yourself from the fruit bowl.

I've book marked this as well thanks calgal08I had some sort of hospital food pie - it was meant to be corned beef pie, but I couldn't find any corned beef only a lot of salt I will definitely drinking lots of water

I had bought a large package of fresh chicken breasts, so I thinly sliced them, and breaded the whole lot this afternoon. I set aside some for our dinner tonight and froze the remainder. So we had chicken parmesan, angel hair pasta, and steamed vegetables. I set aside one of the chicken schnitzel for my lunch tomorrow and will have a chicken schnitzel sandwich schnitzel, mayo, and lettuce on bread....YUM!
