I'm going to a girl's game night tonight. We're having potluck. Everyone is supposed to make a dish to share and bring the recipe. The idea is to bring a recipe that you've always wanted to try, but haven't.
There will be about 12 of us there and I need to drive about 40 minutes to get there, so it needs to be easy to transport and not spill.
I've looked around on Pinterest, but nothing's jumping out at me? What is your "go to" recipe for a pot luck?

How about a 7 layer Mexican dip (refried beans, taco meat, sour cream, avocado/guacamole -- with or without mayo, lettuce, tomato and cheese)? Doesn't have to be really cold or hot. Served with tortilla chips.

I always bring the same dish because it doesn't require heating and is good at room temp Cold Peanut Noodles
Make one package linguini. When it's done, drain it and toss it with sesame seed oil and a little black vinegar and soy sauce to taste
While this cools, Make an egg "omelet" style and then slice it into small strips. I also cut up ham, thinly sliced cucumber shreds and if I have real energy I make some chicken thighs and add shredded chicken. Arrange all of the toppings in rows on top of the noodles.
Also take some peanut butter and keep adding water and stirring, eventually it will turn into a nice sauce, it will go through a gross lumpy stage but keep adding water and stirring. At the end you can add a little soy sauce to taste.
I always just serve it as is and provide the peanut sauce on the side due to allergies, but I love to heap on a ton of peanut sauce. This is very easy it just requires a bunch of steps but I've substituted deli turkey for the shredded chicken when I'm not feeling like making extra effort. I imagine you can do other toppings too like mushrooms but this is always the way my mom made it.

My go-to potluck dish is something we call Taco Salad (but it doesn't really resemble the traditional taco salad).
1 bag of tortilla chips (broken up into bite size pieces) 1 lb. of ground beef (cooked & drained) 1 head of iceberg lettuce (chopped/torn into bite size pieces) 1 tomato (diced) 1 8 oz. bag shredded cheddar cheese 1 bottle creamy italian dressing (to taste - you don't have to use the whole bottle)
Put the beef, lettuce & tomato into individual ziploc bags. Transport everything (don't forget serving utensils if you need them) to the event in the biggest bowl you have (I've thrown some of those freezer paks on top if I'm going a long way). Assemble it when you get there & serve.
It's able to be prepped the day before (not that that helps you today!), travels fairly easily and has always been a big hit.

My go-to for pot lucks right now is just fresh fruit salad. I cut up/chunk two gala apples. Cover with a can of chunked pineapple (in juice, not in syrup)... juice and all. That will keep the apples from turning brown. Then I slice up peaches, strawberries, watermelon, grapes, kiwi, and whatever else we have on hand (no bananas bc I think they get slimy to quickly). Give it a good toss and you're good to go. Everyone loves it and it's easy.
